Tips for success

For a deeper flavor, allow the meatballs to marinate in the glaze for thirty minutes in the refrigerator before turning on the slow cooker. This gives the aromatics more time to penetrate the meat.

If you prefer a bit of heat, you can add a pinch of red pepper flakes during the first phase of cooking, which balances the sweetness of the pineapple.

When serving, consider using a wide serving spoon or tongs to ensure each portion gets a balanced amount of meatballs, noodles, and peppers.

If the sauce becomes too thick during the final minutes, a tablespoon of water can help thin it out to a perfect, pourable consistency. Always serve immediately to ensure the noodles are at their peak texture.

Variations

  • Spicy Meatballs: Add two tablespoons of chili garlic sauce to the glaze mixture before slow cooking. This provides a pleasant heat that complements the sweet pineapple and savory pork perfectly.
  • Vegetable Medley: Include snap peas or broccoli florets in the slow cooker during the final 30 minutes of cooking. This adds more color and texture to the dish without requiring extra prep time.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Not recommended, as the texture of the noodles will deteriorate significantly upon thawing and reheating.
Reheat
Reheat gently in a saucepan over low heat, adding a splash of water to loosen the sauce until heated through.

Store any leftovers in an airtight container in the refrigerator for up to three days. When cooling, ensure the food does not sit at room temperature for longer than two hours to maintain food safety.

The sauce may thicken further as it chills, so you might need to add a splash of water when reheating the dish to restore the correct consistency.

While this recipe is designed for immediate cooking, you can prep the sauce and chop the vegetables in advance and store them in the refrigerator until you are ready to assemble.

However, do not combine the frozen meatballs and noodles with the sauce until you are ready to start the slow cooker, as this ensures the best texture for all components.

Serving ideas

Serve this dish in deep bowls to hold the noodles and the delicious sauce. It is a complete meal on its own, but it pairs well with a side of steamed bok choy or a crisp cucumber salad to add a fresh, crunchy element that contrasts with the rich, savory flavors of the pork and glaze.

For an elegant presentation, place the meatball and noodle mixture in the center of each bowl and finish with a fresh sprinkle of scallions and toasted sesame seeds just before bringing it to the table. The contrast of the bright green scallions against the dark, glossy sauce makes for a beautiful and appetizing presentation.

Frequently asked questions

Can this be made with fresh meatballs?
Yes, fresh meatballs can be used, but they may require a slightly shorter cooking time. Ensure they reach an internal temperature of 160°F (71°C) to be safe to eat.
Why should the noodles be added at the end?
Adding noodles at the end prevents them from becoming mushy and overcooked. Cooking them for just 15 minutes allows them to soften and absorb the sauce while maintaining a pleasant bite.
Can other types of noodles be used?
Yes, dried spaghetti or linguine can serve as a suitable substitute if fresh lo mein noodles are unavailable. Adjust the cooking time based on the package instructions to ensure they are tender.

Slow-Cooker Sweet and Sour Meatballs with Lo Mein

A close-up of a slow cooker filled with glazed pork meatballs, colorful bell peppers, and lo mein noodles.

Ingredients

  • 24 oz frozen homestyle pork meatballs
  • 1 cup pineapple chunks with juice
  • 2 sliced bell peppers
  • 1/2 cup sweet chili soy glaze
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 16 oz Cantonese egg lo mein noodles
  • Toasted sesame seeds for serving
  • Scallions for serving

Instructions

  1. Place the frozen pork meatballs, pineapple chunks with juice, sliced bell peppers, sweet chili soy glaze, ginger, and garlic into the slow cooker bowl. Stir gently to coat the meatballs evenly in the sauce, ensuring the ginger and garlic are distributed throughout the mixture.
  2. Cover the slow cooker with its lid and set to cook on the LOW setting for 3 hours. The slow cooking process allows the meatballs to thaw and heat through until they reach an internal temperature of at least 160°F (71°C) and the glaze reduces into a thick, sticky, and flavorful sauce that coats every ingredient.
  3. Once the meatballs are cooked, add the Cantonese egg lo mein noodles directly into the slow cooker. Toss the noodles thoroughly with the sauce and meatballs. Cover again and cook for an additional 15 minutes, or until the noodles are tender and have absorbed some of the savory sauce.
  4. Once the noodles are tender, turn off the slow cooker. Garnish the dish with toasted sesame seeds and freshly sliced scallions. Serve immediately while hot, using chopsticks or tongs to portion the noodles and meatballs into bowls.
Contains: gluten, soy, eggs, sesame
