Tips for success
To ensure the dip remains at the perfect consistency throughout your gathering, keep the slow cooker on the warm setting. If the cheese begins to look slightly too thick after an hour, stir in a small amount of warm cream or milk.
This will help maintain the velvety texture without diluting the rich, savory flavors of the truffle and meats. Always use a wooden or silicone spoon to avoid scratching the ceramic insert of your slow cooker during service.
For a more intense truffle flavor, consider drizzling an additional small amount of high-quality truffle oil immediately before serving. The heat from the dip will help release the aromatic oils, creating a wonderful sensory experience for your guests.
Pair this dip with a variety of textures; while truffle chips are excellent, adding toasted brioche or even crisp baguette slices provides a great alternative for those who prefer a more bread-based dipping vehicle for the rich cheese sauce.
Variations
- Spicy Surf and Turf: Add two tablespoons of finely diced pickled jalapeños or a teaspoon of hot red pepper flakes to the cheese mixture before cooking to introduce a balanced heat that cuts through the richness of the truffle and cheese.
- Herb-Infused Dip: Replace the chives with a blend of fresh chopped parsley, thyme, and rosemary to provide a more earthy, aromatic finish that complements the filet mignon and adds a fresh, garden-herbal note to the dip.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freezing is not recommended as the cheese sauce may separate and the texture of the lobster will change upon thawing.
- Reheat
- Reheat gently on the stovetop over low heat, stirring constantly until warmed through, or microwave in 30-second intervals until smooth.
If you have leftovers, allow the dip to cool down for no more than two hours before transferring it to an airtight container. Keep the dip refrigerated, where it will stay safe for up to three days. When you are ready to enjoy it again, reheat it gently on the stovetop over low heat or in the microwave in short bursts, stirring frequently to ensure the cheese does not separate or burn during the reheating process.
You can prepare the components ahead of time by searing the beef and poaching the lobster, then storing them in separate airtight containers in the refrigerator for up to one day. Grate the cheeses and store them in a sealed bag.
When ready to serve, simply combine all the ingredients in the slow cooker and follow the cooking steps. This makes the assembly process very quick, allowing you to focus on your guests while the dip cooks perfectly on its own.
Serving ideas
Serve this dip directly from the slow cooker to keep it at the ideal temperature for the duration of your event. Place the slow cooker in the center of your table or serving station, surrounded by a variety of dipping options like truffle potato chips, toasted brioche, or even crisp raw vegetables like endive or celery sticks.
This encourages a communal dining experience where guests can help themselves to the decadent, hot dip throughout the evening.
The aesthetic of the dip is just as important as the taste. Before placing the slow cooker out, ensure the edges of the ceramic insert are clean. The contrast of the dark insert against the creamy, golden dip and the vibrant green chives makes for a visually appealing presentation. Offer small appetizer plates for your guests, and keep a few extra napkins nearby, as this is a rich and indulgent dip that is best enjoyed with plenty of crunch.

Slow-Cooker Surf and Turf Truffle Cheddar Dip

Ingredients
- 1 lb filet mignon, seared and cut into bite-sized cubes
- 2 cups lobster tail, butter-poached and cut into chunks
- 16 oz cream cheese, softened
- 2 1/2 cups truffle cheddar and Gruyere cheese, shredded
- 4 cloves garlic, minced
- 1 tbsp black truffle drizzle, for serving
- 2 tbsp chives, for serving
- black truffle chips and brioche, for serving
Instructions
- Keep the raw beef and raw lobster tail refrigerated until ready to prepare, leaving them at room temperature for at most 30 minutes before cooking. In a hot skillet, sear the cubed filet mignon briefly until browned on all sides and reaching at least 145°F (63°C), then let the meat rest for at least 3 minutes before transferring it to the slow cooker insert. Add the butter-poached lobster chunks, softened cream cheese, shredded truffle cheddar and Gruyere cheese, and minced garlic.
- Cover the slow cooker with its lid and cook on the LOW setting for 90 minutes. Ensure the lobster chunks heat through completely to an internal temperature of at least 145°F (63°C). Stir occasionally toward the end to combine the melted cheeses and meat juices into a velvety fondue.
- Once the dip is fully melted and hot, remove the lid. Drizzle the black truffle drizzle over the surface and sprinkle with fresh chopped chives. Serve immediately directly from the ceramic insert with black truffle chips and brioche on the side.
