Tips for success
For the best texture, slice the plantains into uniform 1/2-inch rounds so they cook evenly.
If you prefer a bit of caramelization, you can quickly sear the plantain slices in a hot skillet before adding them to the slow cooker—this adds an extra layer of flavor. But it's not necessary; the slow cooker will do the work.
This casserole is forgiving—you can swap the chicken for shredded pork or beef, or use pinto beans instead of black beans.
If you like extra heat, add a diced jalapeño with the layers or a few dashes of hot sauce before serving. The toppings are where you can get creative: try sour cream, pickled onions, or sliced radishes.
Variations
- Spicy Chipotle Kick: Add 1-2 chopped chipotle peppers in adobo sauce to the enchilada sauce before layering. For extra heat, sprinkle with cayenne pepper or use a hot enchilada sauce.
- Cheese Swap: Use a blend of Monterey Jack and sharp cheddar instead of Oaxaca cheese. The cheddar adds a sharper flavor, while the Monterey Jack keeps it melty.
- Add Corn: Layer 1 cup of frozen or canned corn (drained) with the black beans for a pop of sweetness and color. This is a great way to use up leftover corn.
- Veggie Boost: Add a sliced bell pepper and a small diced onion to the layers for extra crunch and flavor. Sauté them briefly before adding to the slow cooker if desired.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently to maintain texture.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in the microwave or on the stovetop until hot and bubbly. Add a splash of water or broth if needed.
Store leftover casserole in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or in a skillet over medium heat until hot.
The flavors continue to meld as it sits, making the leftovers even more delicious. To reheat in the oven, cover with foil and warm at 350°F (175°C) for about 15 minutes.
Assemble the casserole in the slow cooker insert up to 24 hours in advance. Cover and refrigerate. When ready to cook, place the insert in the slow cooker and cook on low for 4 hours. You may need to add 30 minutes to the cooking time if starting from cold. The cooked casserole can also be refrigerated and reheated.
Serving ideas
Serve this casserole as a main dish with a side of Mexican rice, warm tortillas, or a simple green salad. The creamy avocado and tangy crema cut through the richness, while the lime adds a bright, citrusy note. For a heartier meal, spoon the casserole into warm tortillas and top with extra cheese and salsa.
This dish also works well for a buffet or potluck—it's easy to scoop and holds up well. Garnish generously with cilantro and lime wedges so guests can add their own.
If serving a crowd, double the recipe and use a larger slow cooker. Leftovers are great for lunch the next day, served over rice or in a burrito bowl.

Slow-Cooker Shredded Chicken, Black Bean & Plantain Fiesta Casserole

Ingredients
- 2 lb chipotle-seasoned shredded chicken, cooked
- 3 ripe yellow plantains, sliced
- 2 cans (15 oz each) black beans, drained and rinsed
- 16 oz red enchilada sauce
- 3 cups Oaxaca cheese, shredded
- 1 diced avocado
- Mexican crema, for drizzling, to taste
- Fresh cilantro, chopped, for garnish, to taste
- 1 fresh lime, cut into wedges
Instructions
- Spread half of the shredded chicken evenly over the bottom of a 6-quart slow cooker. Top with half of the sliced plantains, then half of the black beans. Pour half of the enchilada sauce over the top. Repeat the layers with the remaining chicken, plantains, black beans, and enchilada sauce. Sprinkle the shredded Oaxaca cheese evenly over the top.
- Cover the slow cooker with the lid and set the heat to LOW. Cook for 4 hours, until the plantains are tender and the cheese is melted and bubbly. Do not open the lid during cooking, as this releases heat and extends the cooking time.
- Using an instant-read thermometer, check that the shredded chicken reaches an internal temperature of 165°F (74°C). Since the chicken is already cooked, this step ensures it is heated through properly. If not, continue cooking for another 30 minutes and check again.
- Turn off the slow cooker and let the casserole rest, covered, for 10 minutes. This allows the layers to set slightly and makes serving easier. The resting time also helps the flavors meld together.
- Spoon the casserole onto plates or into bowls. Top each serving with diced avocado, a drizzle of Mexican crema, a sprinkle of fresh cilantro, and a squeeze of lime juice from the lime wedges. Serve hot.
