Before you start

Before starting, make sure the shredded chicken is already cooked and seasoned with chipotle. If using leftover chicken, shred it and toss with chipotle powder or adobo sauce to taste.

Drain and rinse the black beans, slice the plantains into 1/2-inch rounds, and shred the Oaxaca cheese. Have the enchilada sauce measured and ready. The slow cooker should be clean and dry.

Ingredients at a glance (9)
  • 2 lb chipotle-seasoned shredded chicken, cooked
  • 3 ripe yellow plantains, sliced
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 16 oz red enchilada sauce
  • 3 cups Oaxaca cheese, shredded
  • 1 diced avocado
  • Mexican crema, for drizzling, to taste
  • Fresh cilantro, chopped, for garnish, to taste
  • 1 fresh lime, cut into wedges

Instructions

Layer and Start Cooking

  1. Layer the Casserole
Spread half of the shredded chicken evenly over the bottom of a 6-quart slow cooker. Top with half of the sliced plantains, then half of the black beans. Pour half of the enchilada sauce over the top. Repeat the layers with the remaining chicken, plantains, black beans, and enchilada sauce. Sprinkle the shredded Oaxaca cheese evenly over the top.
Look for The layers should be evenly distributed, and the cheese should cover the top completely.
Tip If the plantains are very ripe, handle them gently to avoid mashing.
  2. Cover and Cook on Low
Cover the slow cooker with the lid and set the heat to LOW. Cook for 4 hours, until the plantains are tender and the cheese is melted and bubbly. Do not open the lid during cooking, as this releases heat and extends the cooking time.
Look for The casserole will be bubbling at the edges, and the cheese will be fully melted and lightly browned.
Tip If you prefer a slightly firmer texture for the plantains, check at 3 1/2 hours.

After layering, the slow cooker should be filled with distinct layers of chicken, plantains, beans, and sauce, topped with a generous blanket of cheese. The sauce should be visible between layers.

As the slow cooker heats, you'll notice the cheese beginning to melt and the sauce gently simmering around the edges. The aroma of chipotle and sweet plantains will start to fill the kitchen.

Simmer and Melt

  1. Check the Chicken Temperature
Using an instant-read thermometer, check that the shredded chicken reaches an internal temperature of 165°F (74°C). Since the chicken is already cooked, this step ensures it is heated through properly. If not, continue cooking for another 30 minutes and check again.
Look for The thermometer should read 165°F (74°C) when inserted into the center of the chicken.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken was freshly cooked and still warm, it may reach temperature quickly.
  2. Let It Rest
Turn off the slow cooker and let the casserole rest, covered, for 10 minutes. This allows the layers to set slightly and makes serving easier. The resting time also helps the flavors meld together.
Look for The casserole will be slightly firmer and easier to scoop after resting.
Tip Resting is not a food safety step but improves texture.

By the end of the cooking time, the cheese is fully melted and lightly golden, and the sauce is bubbling. The plantains are tender and have absorbed the red chile sauce, turning a rich reddish-brown.

The casserole looks cohesive and inviting, with the cheese forming a stretchy, gooey topping. The kitchen smells of smoky chipotle, sweet plantains, and melted cheese.

Serve with Fresh Toppings

  1. Serve with Toppings
Spoon the casserole onto plates or into bowls. Top each serving with diced avocado, a drizzle of Mexican crema, a sprinkle of fresh cilantro, and a squeeze of lime juice from the lime wedges. Serve hot.
Look for The avocado should be fresh and green, and the crema should drizzle nicely.
Tip For extra heat, serve with sliced jalapeños or hot sauce.

When serving, the casserole should hold its shape when scooped, with distinct layers visible. The avocado adds creaminess, the crema a tangy richness, and the cilantro and lime bring freshness and brightness. The plantains are sweet and tender, the chicken is smoky and juicy, and the beans add a hearty bite. Each spoonful is a balance of flavors and textures.

Common mistakes

One common mistake is using under-ripe plantains, which remain hard and starchy. Another is overcooking—while the recipe calls for 4 hours on low, cooking longer can make the plantains mushy.

Also, resist the urge to lift the lid and stir, as this releases heat and extends cooking time. Finally, don't skip the resting period, as it helps the casserole hold its shape when served.

How to tell it’s done

The casserole is done when the plantains are fork-tender and the cheese is fully melted and bubbling around the edges. The chicken should be heated through, reaching an internal temperature of 165°F (74°C) if checked. The sauce will have thickened slightly, and the flavors will be well combined. Let it rest for 10 minutes before serving to set the layers.

  • Poultry: 165°F (74°C) in the thickest part
