Tips for success

For the best texture, use boneless country-style pork ribs, which are well-marbled and become exceptionally tender.

If you have time, sear the ribs in a hot skillet before adding them to the slow cooker—this adds a deeper flavor, though the video's dump-and-go method works beautifully too. The apple should be crisp and tart to provide contrast to the rich meat.

When serving, spoon the sauerkraut mixture over the mashed potatoes, letting the juices soak in. Add a generous smear of whole-grain mustard on the side for a bright, tangy kick.

Leftovers taste even better the next day as the flavors meld, so consider making extra. This dish is forgiving and adapts well to personal preferences.

Variations

  • Spicy Kick: Add 1 teaspoon of smoked paprika and a pinch of cayenne pepper to the slow cooker along with the other seasonings. Or substitute andouille sausage for the kielbasa for extra heat and a deeper smoky flavor.
  • Apple Cider Swap: Replace the amber beer with 1/2 cup of apple cider and add a splash of apple cider vinegar. This non-alcoholic version is slightly sweeter and pairs well with pork.
  • Caraway Boost: If using regular sauerkraut, stir in 1 teaspoon of caraway seeds and 1/2 teaspoon of black peppercorns. This enhances the traditional German flavor profile.
  • Honey-Mustard Glaze: After shredding the pork, stir in 2 tablespoons of honey and 1 tablespoon of whole-grain mustard. This adds a sweet-tangy glaze that clings to the meat and kraut.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to develop, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed to loosen the sauce.

This recipe is ideal for meal prep. Assemble the slow cooker the night before, cover, and refrigerate the insert. In the morning, place it in the slow cooker and cook on low as directed.

The dish also freezes well; cool completely, transfer to a freezer-safe container, and freeze for up to 3 months.

Serving ideas

Serve the sauerkraut, kielbasa, and pork over a generous scoop of buttery whipped mashed potatoes. The creamy potatoes balance the tangy kraut and rich meat.

Add a dollop of whole-grain mustard on the side for a sharp, piquant contrast. A simple green salad or steamed green beans make a fresh side dish.

For a casual meal, pile the mixture onto crusty rolls for a hearty sandwich. Or serve it alongside egg noodles tossed with butter and parsley. The dish is versatile and pairs well with a cold beer or a crisp Riesling. Garnish with fresh parsley if desired, though the video keeps it simple.

Frequently asked questions

Can this recipe be made ahead of time?
Yes, assemble the slow cooker the night before and refrigerate the insert. In the morning, start cooking on low. The dish also reheats well, making it great for leftovers.
Can this be frozen?
Absolutely. Cool the dish completely, transfer to a freezer-safe container, and freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop.
What can be used instead of beer?
Chicken broth or apple cider are excellent substitutes. Use 1/2 cup of either to replace the beer. The flavor will be slightly different but still delicious.
How long can leftovers be kept in the fridge?
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a saucepan or microwave, adding a splash of broth if the mixture seems dry.
Why is the sauerkraut not sour after cooking?
Long cooking mellows the acidity of sauerkraut, and the brown sugar and apple add sweetness. This is intentional, creating a balanced, sweet-tangy flavor. If a more pronounced sourness is desired, add an extra cup of sauerkraut just before serving.

Prep 15 minCook 7 hTotal 7 h 15 minServes 6
A rustic crockpot filled with tender pork ribs, sliced kielbasa, and golden sauerkraut, steaming and ready to serve.

Ingredients

  • 2 lb boneless country-style pork ribs
  • 1 lb smoked kielbasa, sliced
  • 32 oz Bavarian sauerkraut, drained
  • 1 Granny Smith apple, sliced
  • 1/4 cup brown sugar
  • 1/2 cup amber beer
  • Buttery whipped mashed potatoes, for serving
  • Whole-grain mustard, for serving

Instructions

  1. Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker. Arrange the sliced smoked kielbasa over the ribs. Spread the drained Bavarian sauerkraut evenly on top. Scatter the sliced Granny Smith apple over the sauerkraut, then sprinkle with brown sugar. Pour the amber beer over everything.
  2. Place the lid on the slow cooker and set it to LOW. Cook for 7 hours, undisturbed, until the pork ribs are fork-tender and shred easily.
  3. After 7 hours, test the pork ribs with a fork. They should shred effortlessly. If not, continue cooking for another 30 minutes and test again.
  4. Using two forks, shred the pork ribs directly in the slow cooker. Stir the shredded meat into the sauerkraut mixture so everything is well combined.
  5. Spoon the hot sauerkraut, kielbasa, and shredded pork over buttery whipped mashed potatoes. Serve with whole-grain mustard on the side.
