Tips for success
To enhance the presentation, serve the salmon directly from the slow cooker onto warm plates. Spoon a generous amount of the tomato coulis and the softened onions over the top of each fillet. The sauce is excellent when served alongside a side of crusty bread, which is perfect for soaking up the flavorful tomato juices that remain on the plate after the fish is finished.
If you prefer a more concentrated sauce, you can remove the salmon once cooked and set the slow cooker to a high setting for an additional 10 to 15 minutes with the lid off.
This allows some of the liquid to evaporate, resulting in a thicker, more intense tomato reduction. Be careful not to leave it too long, as the sauce can easily burn once the water content has reduced significantly.
Variations
- Mediterranean Twist: Add a handful of halved Kalamata olives and a few tablespoons of capers to the slow cooker along with the tomato coulis for a salty, briny Mediterranean flavor profile.
- Spicy Tomato Salmon: Incorporate a teaspoon of crushed red pepper flakes into the tomato coulis before pouring it over the salmon if you prefer a dish with a mild, lingering heat.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days. Ensure the fish has cooled for no more than 2 hours before refrigerating.
- Reheat
- Reheat gently in the microwave on low power until warmed through, or in a small saucepan over low heat, adding a splash of water if the sauce is too thick.
Transfer any leftovers to an airtight container. Cool the salmon at room temperature for no more than 2 hours before placing the container into the refrigerator.
Properly stored, the salmon and tomato sauce will maintain their quality in the refrigerator for up to 3 days. Ensure the container is sealed tightly to prevent the fish from absorbing other refrigerator odors and to keep the sauce from drying out.
While this dish is best prepared fresh for the best texture, the ingredients can be prepped in advance. Slice the onions and store them in the refrigerator until you are ready to assemble the dish.
You can also measure out the tomato coulis and herbs, keeping them in a small container. When ready to cook, simply layer everything into the slow cooker, which saves significant time during a busy evening.
Serving ideas
Serve the salmon warm, directly from the slow cooker, to ensure the best texture and flavor. Place each fillet on a plate and top with the cooked onion and tomato mixture. The meal pairs beautifully with simple sides like steamed green beans, roasted potatoes, or a light green salad, which provide a nice contrast to the richness of the salmon and the acidity of the tomato sauce.
For a more elegant presentation, gently transfer the fillets using a wide spatula to prevent them from breaking. Spoon the tomato coulis around the base of the fish rather than directly on top, allowing the vibrant color of the salmon to show.
A light garnish of fresh herbs can be added just before serving, though the herbes de Provence in the sauce already provide a lovely aromatic foundation for the dish.
