Tips for success

For an extra layer of flavor, consider adding a squeeze of fresh lime juice just before serving. The acidity helps to brighten the deep, savory notes of the fajita spices and cuts through the richness of the melted cheese. If you enjoy a bit of heat, a dash of your favorite hot sauce can be stirred into the pot during the final minutes of cooking. Always taste the broth before serving to ensure the seasoning is balanced to your personal preference.

If you find the chili is too thin for your liking, you can thicken the sauce by mashing a few pieces of the chicken or by stirring in a small amount of cornstarch slurry during the final ten minutes of cooking.

This will give the chili a heartier, more stew-like consistency. Additionally, ensure that you are using a high-quality chicken broth, as this serves as the primary base for the sauce and significantly influences the final depth of the chili's flavor profile.

Variations

  • Spicy Pepper Chili: Add two chopped jalapeño peppers along with the roasted red peppers for a sharper kick. The heat will infuse the broth during the slow cooking process, creating a balanced but distinct spicy flavor profile.
  • Black Bean Addition: Stir in one can of rinsed and drained black beans during the final thirty minutes of cooking. This adds extra texture and makes the chili heartier, serving more people with a single batch.

Storage and make-ahead

Fridge
Keep in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months.
Reheat
Reheat gently on the stovetop over medium-low heat or in the microwave until steaming hot.

Store any leftovers in an airtight container in the refrigerator for up to three days. Ensure the chili has cooled to room temperature, but do not leave it out for more than two hours to maintain food safety. When storing, keep the cheese separate if possible, as it can become soggy when reheated. If you have already added the cheese, it is best to consume the leftovers within two days to ensure the best quality and texture of the melted topping.

This dish is an excellent candidate for making ahead. You can assemble all the ingredients in the slow cooker insert the night before and store it in the refrigerator. In the morning, simply place the insert into the base and start the cooking process.

This saves significant time and makes dinner preparation completely stress-free. If you prefer, you can cook the entire dish in advance, allow it to cool, and store it for a quick meal later in the week.

Serving ideas

Serve the chili hot in deep bowls to retain its warmth. Because the chicken is shredded and the sauce is savory, this dish pairs beautifully with a side of warm flour tortillas or a crisp garden salad to balance the richness.

Adding a dollop of sour cream or a sprinkle of fresh cilantro can also provide a nice contrast in texture and flavor. The melted mozzarella cheese is the final essential touch that ties all the elements together into a cohesive, satisfying meal.

Consider serving the chili as part of a larger spread by setting out various toppings like diced avocado, pickled jalapeños, or additional shredded cheese, allowing everyone to customize their bowl.

The chili's versatility makes it a great option for casual gatherings where guests can help themselves. Ensure that you have plenty of napkins on hand, as this is a hearty, comforting dish that is best enjoyed in a relaxed setting where you can savor every bite of the flavorful chicken.

Frequently asked questions

Can this recipe be made with frozen chicken breasts?
It is not recommended to use frozen chicken in a slow cooker. The chicken spends too much time in the temperature danger zone while thawing, which can lead to bacterial growth. Always thaw chicken completely in the refrigerator before adding it to the slow cooker.
Why does the chicken seem dry even after slow cooking?
Chicken breasts are lean and can become dry if cooked for too long. Ensure you are using the correct timing settings and that the chicken is fully submerged in the broth. Using chicken thighs instead of breasts can provide more moisture and a richer, more tender result.
How can the chili be thickened if it is too watery?
If the chili is too thin, you can leave the lid off for the final 30 minutes of cooking on high to allow some of the liquid to evaporate. Alternatively, mix one tablespoon of cornstarch with two tablespoons of cold water and stir it into the chili during the last 15 minutes of cooking.
