Tips for success

For a more polished presentation, serve the cake with a light dusting of cocoa powder or a few fresh raspberries. The tartness of the berries pairs beautifully with the richness of the white chocolate and cream cheese.

If the cake appears too soft after the recommended time, add an extra 10 minutes of cooking, but monitor it closely to ensure the edges do not become dry or burnt, as the slow cooker can continue to conduct heat even after it is turned off.

For an intense flavor, add a teaspoon of vanilla extract to the cream cheese filling. This enhances the sweetness of the white chocolate and complements the cocoa notes in the red velvet cake. When serving, use a large, shallow spoon to scoop deep into the center of the cake, ensuring every portion includes both the firm red velvet sponge and a generous amount of the warm, molten cream cheese lava core for the best possible flavor experience.

Variations

  • Dark Chocolate Lava: Substitute the white chocolate chips with dark chocolate chips for a deeper, more intense cocoa flavor. This variation pairs exceptionally well with a pinch of sea salt on top.
  • Spiced Red Velvet: Add a half teaspoon of cinnamon and a pinch of nutmeg to the red velvet cake mix before adding the wet ingredients for a warm, spiced version of the classic cake.

Storage and make-ahead

Fridge
Keep leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat
Reheat individual portions in the microwave for 20-30 seconds until the center is warm and fluid again. Do not overheat to prevent the cake from drying.

Store any leftover cake in an airtight container to maintain its moisture. Because this dish contains dairy in the filling, it must be refrigerated promptly. Place the container in the coldest part of the refrigerator, away from the door, to keep the temperature consistent.

The cake is best consumed within three days, as the texture of the lava center may change over time. Ensure the cake is completely cooled before covering to prevent excess condensation from making the sponge soggy.

While this dessert is best served warm immediately after cooking, you can prepare the batter and the cream cheese filling separately in advance. Keep them in sealed containers in the refrigerator for up to 24 hours.

When ready to cook, simply assemble the layers in the slow cooker as directed. This makes it a convenient option for hosting dinner parties, as you can assemble the ingredients just before guests arrive, allowing the cake to cook while you enjoy your meal.

Serving ideas

Serve the lava cake warm directly from the slow cooker for the best experience. Use a large spoon to scoop a portion of the cake onto individual dessert plates, ensuring that each serving gets a generous amount of the molten white chocolate cream cheese center. The contrast between the warm, soft cake and the flowing ganache is the highlight of this dish, so serving it immediately while it is fresh and hot is highly recommended for the best texture.

For an added touch of elegance, you can garnish the plates with a dollop of unsweetened whipped cream or a sprig of fresh mint. The simplicity of the cake allows for these minimal additions to enhance the presentation without overpowering the flavors.

Ensure that the plates are slightly warmed if possible, as this will help keep the molten center liquid for a longer period while you enjoy the dessert. This dish is perfect for intimate gatherings and special evening celebrations.

Frequently asked questions

Can this be made in a smaller slow cooker?
A 6-quart slow cooker is recommended for the best results. A smaller size may lead to a deeper cake, which can result in uneven cooking and a center that does not set correctly.
Why is the center not molten?
If the center is not molten, the cake may have been overcooked. The lava core depends on the filling staying liquid while the exterior sets, so monitor the cooking time carefully.
Can a different cake mix flavor be used?
Yes, any standard boxed cake mix works well. Chocolate or devil's food cake mixes are excellent alternatives that pair beautifully with the cream cheese filling for a decadent result.

Ingredients

  • 1 box red velvet cake mix
  • 8 oz cream cheese, softened
  • 1 cup white chocolate chips

Instructions

  1. In a medium bowl, prepare the red velvet cake mix according to the package instructions using the required oil, water, and eggs. In a separate bowl, beat the softened cream cheese until smooth, then stir in the white chocolate chips to create the ganache filling.
  2. Grease the interior of the 6-quart slow cooker with non-stick spray. Pour the prepared red velvet cake batter into the bottom of the ceramic insert, spreading it evenly. Carefully ladle the cream cheese and white chocolate mixture into the center of the batter to create a well. Sprinkle additional white chocolate chips over the top.
  3. Cover the slow cooker with the lid. Set the heat to HIGH and cook for 2 hours and 15 minutes. The edges of the cake should be set and firm, while the center remains molten and bubbling. Once finished, turn off the slow cooker and allow the cake to rest for 10 minutes before serving warm with a large spoon.
