Tips for success
For the best flavor, consider browning the kielbasa in a skillet before adding it to the slow cooker. This adds a caramelized crust and deepens the smoky taste.
If you skip this step, the kielbasa will still be delicious, but browning takes it to the next level. Just be sure to drain any excess fat before adding to the Crockpot.
To prevent the pasta from becoming too soft, cook on low rather than high. The slow, gentle heat allows the pasta to absorb the sauce without breaking down.
If you're short on time, you can cook on high for 2-3 hours, but the texture may be slightly less ideal. Always check for doneness before serving, and adjust cooking time as needed.
Variations
- Spicy Andouille: Replace the smoked kielbasa with andouille sausage for a spicier, Cajun-inspired version. Add a pinch of cayenne or a dash of hot sauce to the cream sauce for extra heat.
- Vegetarian: Omit the kielbasa and add a can of drained chickpeas or white beans for protein. Use a vegetarian cream sauce and add sautéed mushrooms for an earthy flavor.
- Broccoli and Cheese: Add 2 cups of frozen broccoli florets to the slow cooker during the last 30 minutes of cooking. The broccoli will steam and add a fresh, green element to the dish.
- Chicken Alfredo: Substitute cooked, shredded chicken for the kielbasa. Use a classic Alfredo sauce and add a handful of spinach during the last 15 minutes for a colorful twist.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of milk or broth to bring back the creamy texture.
- Freezer
- This dish freezes well for up to 3 months. Cool completely, then transfer to a freezer-safe container. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring between, or in a saucepan over medium-low heat with a splash of milk or broth until hot and creamy.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce as it sits, so you may want to add a splash of milk or broth when reheating to restore creaminess. Reheat gently in the microwave or on the stovetop until hot throughout.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert into the slow cooker and cook on low as directed, adding about 30 minutes to the cooking time to account for the cold start. This is a great make-ahead meal for busy days.
Serving ideas
Serve this creamy pasta as a main dish with a simple green salad and crusty bread to soak up the extra sauce.
It's hearty enough to stand alone, but a side of roasted vegetables or steamed broccoli adds color and balance. For a lighter meal, serve smaller portions as a side dish alongside grilled chicken or pork chops.
Garnish with fresh parsley or basil for a pop of color and freshness. A sprinkle of red pepper flakes adds a gentle heat that complements the smoky kielbasa. This dish is best enjoyed hot, right from the slow cooker, so set it on the table and let everyone serve themselves.

Slow Cooker Provolone Kielbasa Cavatappi: Creamy One-Pot Pasta

Ingredients
- 2 lb smoked kielbasa, sliced into 1/2-inch medallions
- 12 oz cavatappi pasta
- 2 cups roasted garlic Parmesan cream sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the sliced smoked kielbasa medallions in the bottom of a 6-quart slow cooker in an even layer. Add the cavatappi pasta on top of the kielbasa. Pour the roasted garlic Parmesan cream sauce over the pasta, making sure the pasta is mostly submerged. Stir gently with a wooden spoon to combine the kielbasa, pasta, and sauce evenly.
- Spoon dollops of whole-milk ricotta over the top of the pasta mixture. Sprinkle the shredded provolone evenly over the entire surface, covering the ricotta dollops and the pasta. Do not stir the cheese into the mixture; leave it layered on top so it melts into a golden, bubbly crust during cooking.
- Cover the slow cooker with its lid. Cook on LOW for 4 hours, or until the pasta is tender and the sauce is bubbling around the edges. Do not lift the lid during the first 3 hours to keep the heat and steam inside. After 3 hours, check the pasta for doneness; if it is still firm, continue cooking for up to 1 more hour, checking every 15 minutes.
- Once the pasta is al dente, gently stir the mixture to incorporate the melted cheese and ricotta into the sauce. The sauce will thicken slightly as it cools. Taste and adjust seasoning with salt and pepper if desired. If the mixture seems too thick, stir in a splash of warm water or milk to loosen it to your preferred consistency.
- Serve the creamy kielbasa cavatappi directly from the slow cooker, or spoon onto a large platter or individual bowls. Garnish with extra shredded provolone or fresh parsley if desired. Enjoy immediately while hot and creamy.
