Tips for success
For the most flavorful result, consider searing the pork roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a golden-brown crust and deepens the flavor of the final dish.
However, the recipe works beautifully without searing, so it's optional. If you choose to sear, do it in a skillet over medium-high heat for 2 to 3 minutes per side.
To make the pan jus even richer, you can thicken it at the end of cooking. Remove the meat and vegetables, then whisk a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water into the juices. Cook on high for 15 minutes until thickened. This creates a gravy-like sauce. If you prefer a lighter sauce, simply use the juices as they are.
Variations
- Herbed Butter: Mix 1 tablespoon of chopped fresh rosemary and 1 tablespoon of chopped fresh thyme into the butter before placing it on the roast. The herbs infuse the meat and vegetables with a fragrant, earthy flavor.
- Garlic Lovers: Add 6 cloves of garlic, peeled and smashed, to the slow cooker along with the vegetables. The garlic becomes sweet and mellow, and it flavors the entire dish. You can also rub the roast with a little garlic paste before cooking.
- Spicy Kick: Sprinkle 1/2 teaspoon of red pepper flakes or a pinch of cayenne pepper over the roast before cooking. The heat balances the richness of the butter and adds a subtle warmth to the dish.
- Root Vegetable Medley: Swap the carrots for a mix of parsnips, turnips, or celery root. Cut them into similar-sized chunks and cook as directed. This adds a variety of textures and flavors that pair beautifully with pork.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop, adding a splash of water or broth if needed to loosen the sauce. The dish also freezes well for up to 3 months.
This recipe is perfect for meal prep. You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
If you do this, you may need to add 30 minutes to the cooking time because the ingredients start cold. You can also cook the full roast and freeze portions for quick dinners later.
Serving ideas
Serve the pork sirloin roast with the potatoes and carrots, spooning plenty of the buttery pan jus over everything. It's a complete meal on its own, but it also pairs well with a simple green salad or steamed green beans.
For a heartier meal, serve over rice, egg noodles, or polenta to soak up every drop of the sauce. Crusty bread is also a great addition.
For a family-style presentation, transfer the entire contents of the slow cooker to a large platter or shallow bowl. Garnish with fresh parsley or thyme if you like, though the recipe is delicious without any garnish.
The leftovers make excellent sandwiches — pile the shredded pork on a soft bun with a little of the pan juices. This dish is comfort food at its best.

Slow Cooker Pork Sirloin Roast with Yukon Gold Potatoes

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 4 heirloom carrots, thick-cut
- 1/2 cup salted butter (1 stick)
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the pork sirloin roast in the center of the slow cooker insert. Scatter the halved baby Yukon Gold potatoes and thick-cut heirloom carrots around the roast, tucking them snugly against the meat. Season everything with kosher salt and black pepper.
- Place the whole stick of salted butter on top of the seasoned roast. It will melt and baste the meat and vegetables as the slow cooker works its magic.
- Cover the slow cooker and cook on low for 8 to 10 hours, or until the pork is fork-tender and shreds easily. The internal temperature of the pork should reach at least 145°F (63°C), but for shredding, cook until it reaches 200°F (93°C) for the most tender result. Let it rest for 3 minutes before slicing.
- Remove the roast to a cutting board and let it rest for at least 3 minutes. Using two forks, shred the pork into bite-sized pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker and stir gently to coat with the pan juices.
- Spoon the shredded pork, potatoes, and carrots onto plates or into bowls. Drizzle with the buttery pan jus from the slow cooker. Serve hot.
