Tips for success
For the most tender pork, always cook on LOW. The low, slow heat gives the connective tissue time to break down completely, resulting in meat that shreds effortlessly. If you're short on time, HIGH works, but the texture will be slightly less fall-apart.
Also, consider searing the roast in a hot skillet for a few minutes per side before adding it to the slow cooker — this adds a deeper, caramelized flavor to the final dish, though it's entirely optional.
To make the gravy extra rich, you can whisk in a tablespoon of cornstarch mixed with a little cold water during the last 30 minutes of cooking. This will thicken the sauce slightly. If you prefer a thinner gravy, just leave it as is.
The butter in the recipe helps create a silky, glossy sauce, so don't skip it. And remember to taste the gravy before serving — you may want to add a pinch of black pepper or a splash of Worcestershire sauce to brighten the flavors.
Variations
- Spicy Kick: Add a diced jalapeño or a teaspoon of red pepper flakes to the slow cooker along with the other ingredients. The heat will infuse into the gravy, giving the pork a subtle warmth that pairs well with the savory flavors.
- Garlic Lover's: Add 4 to 6 cloves of minced garlic to the slow cooker with the mushrooms. The garlic will mellow during the long cooking time, adding a sweet, savory depth to the gravy.
- Herb-Infused: Add a few sprigs of fresh thyme or rosemary to the slow cooker before cooking. Remove the sprigs before shredding the pork. The herbs will perfume the gravy and add an earthy note.
- Veggie-Packed: Add sliced carrots, celery, or potatoes to the slow cooker along with the mushrooms. The vegetables will cook in the gravy and become tender, making it a one-pot meal.

Serving ideas
The classic way to serve this shredded pork is piled high on toasted brioche slider buns, with a spoonful of the mushroom gravy spooned over the top.
The sweet, buttery brioche is the perfect contrast to the savory, rich pork. You can also serve it over mashed potatoes, egg noodles, or rice, letting the gravy soak into the starch for a truly comforting meal.
For a lighter option, serve the pork over a bed of greens or roasted vegetables. The gravy acts as a dressing, and the mushrooms add an earthy note. Leftovers are fantastic in tacos, quesadillas, or stuffed into baked potatoes. No matter how you serve it, this dish is sure to become a family favorite — it's simple, satisfying, and endlessly versatile.

Easy Crockpot Pork Sirloin Roast with Mushroom Gravy

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 2 cups beef or pork brown gravy
- 4 tbsp unsalted butter, cut into pats
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the roast, tucking them into the corners of the slow cooker.
- Pour the brown gravy over the roast and mushrooms, making sure the gravy covers the bottom of the slow cooker and coats the roast. Dot the top of the roast with the pats of unsalted butter.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for shredding, cook until it's much more tender. Let it rest for 3 minutes before slicing.
- Once the pork is fork-tender, remove it from the slow cooker to a cutting board. Use two forks to shred the meat into bite-sized pieces, discarding any excess fat. Return the shredded pork to the slow cooker and stir to coat with the gravy and mushrooms.
- Serve the shredded pork and mushrooms with a generous spoonful of the rich gravy. Pile it onto toasted brioche slider buns or over mashed potatoes, rice, or noodles. Let any leftovers cool for no more than 2 hours before refrigerating.
