Tips for success
For the most flavor, toast the achiote paste in a dry skillet for a minute before adding it to the slow cooker. This releases its essential oils and deepens its earthy notes.
If you have time, marinate the chicken in the achiote mixture in the refrigerator for a few hours before cooking—this extra step intensifies the flavor even more.
When assembling the bowls, warm the rice and beans so the dish is hot throughout. The cool, fresh toppings like pico de gallo and avocado provide a nice contrast to the warm, savory chicken.
For extra crunch, add tortilla chips or toasted pepitas. A squeeze of fresh lime juice over the top just before serving brightens all the flavors and ties the bowl together.
Variations
- Spicy Chipotle Version: Add 1-2 chipotle peppers in adobo sauce, minced, to the achiote mixture for a smoky, spicy kick. Reduce the amount of smoked paprika to 1/2 teaspoon to let the chipotle shine. Top with sliced jalapeños for extra heat.
- Crispy Chicken Option: After slow-cooking and chopping the chicken, spread it on a baking sheet and broil for 3-4 minutes until edges are crispy. Then melt the cheese over the top and serve. This adds a pleasant textural contrast.
- Vegetarian Bean Bowl: Omit the chicken and double the pinto beans or add roasted sweet potatoes. Use the same achiote-citrus sauce as a simmering liquid for the beans and vegetables. Cook on LOW for 2-3 hours until vegetables are tender.
- Taco-Style Serving: Instead of bowls, serve the cheesy achiote chicken in warm corn tortillas with the same toppings. This makes a great taco night option. Add shredded cabbage or lettuce for crunch.
Storage and make-ahead
- Fridge
- Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Keep rice, beans, and toppings separately.
- Freezer
- Freeze the cooked chicken (without toppings) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat the chicken in a microwave-safe dish for 2-3 minutes, stirring halfway.
Store any leftover chicken in an airtight container in the refrigerator for up to 4 days. Keep the rice, beans, and other toppings separate to maintain their textures.
The chicken reheats well in the microwave or in a skillet over medium heat with a splash of water or broth to keep it moist. Reheat only the portion you plan to eat to avoid repeated warming.
This recipe is ideal for meal prep. The chicken can be cooked up to 3 days ahead and stored in the refrigerator.
When ready to serve, reheat the chicken gently on the stovetop or in the microwave, then melt the cheese over the top. Prepare the rice, beans, and fresh toppings ahead of time and assemble the bowls when you are ready to eat.
Serving ideas
Serve the burrito bowls with warm tortillas on the side for extra heft, or keep it low-carb by serving over a bed of lettuce. A dollop of sour cream and a few slices of avocado add creaminess, while pico de gallo provides freshness and a little heat. Offer lime wedges so everyone can squeeze on extra citrus to taste.
For a fully loaded bowl, add corn kernels, black beans, or a spoonful of salsa verde. If you like spice, top with pickled jalapeños or a drizzle of hot sauce. The bowls are endlessly customizable, so set out the toppings and let everyone build their own. This makes it a great choice for feeding a crowd or a busy family.
