Before you start

Before you begin, set out your slow cooker and gather all the ingredients. If your achiote paste is in a solid block, crumble it into the slow cooker so it dissolves more easily. Mince the garlic, juice the oranges and limes, and measure out the spices.

Have the chicken thighs ready to add. If you are serving the bowls with rice and beans, prepare those ahead of time or use leftovers. This is a true dump-and-go recipe, so once everything is in the cooker, you can walk away.

Ingredients at a glance (15)
  • 3 lb boneless skinless chicken thighs
  • 2 tbsp achiote paste
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 6 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1 cup shredded Chihuahua cheese
  • 4 cups cilantro-lime rice
  • 1 1/2 cups cooked pinto beans
  • 1 cup pico de gallo
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1 lime, cut into wedges

Instructions

Build the Base

  1. Build the Achiote Citrus Base
In the slow cooker, whisk together the achiote paste, orange juice, lime juice, minced garlic, smoked paprika, ground cumin, and kosher salt until smooth. Add the chicken thighs and turn to coat evenly with the mixture.
Look for The chicken thighs are evenly coated in a brick-red achiote mixture.
Tip Use a spatula to scrape the bottom of the slow cooker to ensure the paste is fully dissolved.
  2. Slow-Cook the Chicken
Cover the slow cooker and cook on LOW for 5 hours, until the chicken thighs are tender and easily shred with a fork. The chicken should be cooked through and reach an internal temperature of 165°F (74°C).
Look for The chicken is fork-tender and infused with the citrus-achiote sauce.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid opening the lid during cooking to maintain steady heat.

At the end of this phase, the slow cooker contains a smooth, brick-red liquid with the chicken thighs submerged. The aroma is bright with citrus and garlic, with a warm, earthy undertone from the achiote and spices. The chicken should be fully coated and ready to cook.

Simmer and Melt

  1. Chop the Chicken
Using tongs, transfer the chicken thighs to a cutting board. Let them rest for 5 minutes, then chop into bite-sized pieces. Return the chopped chicken to the slow cooker and stir to coat with the sauce.
Look for The chicken pieces are evenly coated in the deep orange-red sauce.
Tip For larger chunks, shred with two forks instead of chopping.
  2. Melt the Cheese
Sprinkle the shredded Chihuahua cheese evenly over the chopped chicken in the slow cooker. Cover and cook on LOW for about 10 minutes, until the cheese is melted and bubbly.
Look for The cheese is fully melted and forms a creamy layer over the chicken.
Tip If you prefer a crispier cheese topping, transfer to a broiler-safe dish and broil for 2-3 minutes.

After five hours, the chicken is fork-tender and the sauce has deepened in color. The kitchen smells intensely of citrus and achiote.

The chicken pieces are chopped and returned to the sauce, then topped with cheese that melts into a creamy layer. Everything looks rich and inviting.

Assemble and Serve

  1. Assemble the Burrito Bowls
Divide the cilantro-lime rice among serving bowls. Top with the cheesy achiote chicken, pinto beans, pico de gallo, sliced avocado, and a dollop of sour cream. Serve with lime wedges on the side.
Look for Each bowl is colorful and piled high with toppings.
Tip Warm the pinto beans and rice before assembling for a hot meal.

The bowls are beautifully composed with fluffy rice, cheesy chicken, beans, fresh pico de gallo, avocado slices, and a dollop of sour cream. The colors are vibrant—orange-red chicken, green avocado, red and white pico, and creamy white cheese. A squeeze of lime brightens every bite.

Common mistakes

One common mistake is opening the slow cooker lid too often, which lets heat escape and extends the cooking time. Another is using chicken breasts instead of thighs and cooking them for the full five hours, resulting in dry meat.

Be sure to dissolve the achiote paste thoroughly to avoid clumps; whisking it with the liquids first helps. Finally, do not skip the resting time after cooking—letting the chicken rest for a few minutes before chopping keeps the juices in the meat.

How to tell it’s done

The chicken is done when it is fork-tender and easily pulls apart. To be sure it is safe to eat, insert an instant-read thermometer into the thickest piece of chicken; it should read 165°F (74°C).

The sauce will have reduced slightly and turned a deep brick-red. The chicken should be infused with the citrus-achiote flavor and look moist and glossy. After chopping and adding the cheese, wait until the cheese is fully melted and bubbly before serving.

  • Poultry: 165°F (74°C) in the thickest part
