Tips for success

For the best flavor, sear the short ribs in a hot skillet with a little oil before adding them to the slow cooker. This step adds a deep, caramelized crust that enhances the final dish.

While the video doesn't show searing, it's an optional extra if you have the time. Just be careful not to skip it if you want an even richer taste.

If the sauce is too thin after cooking, remove the ribs and pineapple, then simmer the sauce on the stovetop or set the slow cooker to high and leave the lid off for 15-20 minutes to reduce.

You can also whisk in a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) to thicken it quickly. But with a thick BBQ sauce and drained pineapple, this is rarely needed.

Variations

  • Spicy Pineapple BBQ Ribs: Add 1-2 minced chipotle peppers in adobo sauce or 1 teaspoon of crushed red pepper flakes along with the ginger. This gives the sweet-savory sauce a smoky, fiery kick that pairs beautifully with the pineapple.
  • Honey Garlic Short Ribs: Replace the BBQ sauce with 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 1/4 cup ketchup. Omit the pineapple and ginger, and add the garlic with the sauce for a sticky, savory-sweet glaze.
  • Beef Chuck Variation: Substitute boneless beef chuck roast cut into large chunks for the short ribs. Cook on low for 8 hours until fork-tender. The sauce will be richer and the meat will shred easily for sandwiches or tacos.
  • Pineapple Teriyaki Ribs: Use 1 1/2 cups teriyaki sauce and 1/2 cup pineapple juice in place of the BBQ sauce. Add the ginger and a splash of rice vinegar for a tangy, Asian-inspired twist. Serve over steamed rice with sesame seeds.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of water or broth.
Freezer
Freeze cooled ribs in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a covered saucepan over low heat, adding a splash of water or broth to loosen the sauce, or microwave in 30-second bursts until hot.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the sauce will thicken as it cools. Reheat gently in the microwave or on the stovetop with a splash of water or beef broth to loosen the sauce.

This dish is perfect for making ahead. Assemble the ribs, pineapple, ginger, and sauce in the slow cooker insert and refrigerate overnight.

In the morning, place the insert in the slow cooker base and cook on low as directed. You can also fully cook the ribs, then cool and refrigerate them for up to 2 days before reheating.

Serving ideas

Serve the short ribs over creamy mashed potatoes, steamed rice, or buttered egg noodles to soak up the rich sauce. The sweet and smoky flavors also pair well with a crisp green salad or roasted vegetables. For a true Southern touch, add a side of cornbread or collard greens.

Garnish with a sprinkle of sliced green onions or sesame seeds if you like, though the dish is delicious as is.

The pineapple rings are a delightful sweet contrast to the savory meat—don't leave them behind. For a casual meal, pile the ribs onto slider buns with a spoonful of sauce for a fun, messy sandwich.

Frequently asked questions

Can this recipe be made with boneless short ribs?
Yes, boneless short ribs work well. They may cook slightly faster, so check for tenderness at the 7-hour mark on low. Since they lack the bone, they can dry out if overcooked, so keep an eye on them. The sauce will still be rich and flavorful.
Why does the sauce turn watery?
Watery sauce usually comes from using a thin BBQ sauce or not draining the pineapple well. The meat also releases juices as it cooks. To fix it, remove the ribs and simmer the sauce on the stovetop until thickened, or whisk in a cornstarch slurry. Always choose a thick, premium BBQ sauce and drain the pineapple thoroughly.
Can this be cooked on high instead of low?
Yes, you can cook on high for 4-5 hours instead of low for 8. The result will be slightly less tender, but still delicious. Be sure to check for doneness with a fork—if it doesn't pierce easily, continue cooking in 30-minute increments.
How should leftovers be stored and reheated?
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a saucepan over low heat with a splash of water or beef broth to loosen the sauce. You can also microwave in 30-second bursts, stirring in between, until hot.
Can this recipe be doubled?
Yes, as long as your slow cooker is large enough (at least 6 quarts). Keep the ingredients in the same proportions and ensure the ribs are in a single layer. You may need to add 30-60 minutes of cooking time if the pot is very full.

Slow cooker short ribs with pineapple rings and BBQ sauce, glistening in the pot.

Ingredients

  • 3 lb bone-in beef short ribs
  • 1 can (20 oz) pineapple rings in juice, drained
  • 2 tbsp fresh ginger, grated
  • 2 cups thick Kansas City-style BBQ sauce

Instructions

  1. Place the beef short ribs in the bottom of a 6-quart slow cooker in a single layer. Arrange the pineapple rings over the ribs, tucking some between them. Sprinkle the grated ginger evenly over the top.
  2. Pour the BBQ sauce over the ribs and pineapple, using a spatula to spread it evenly so all the meat is coated. No need to stir; the sauce will blend during cooking.
  3. Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the meat is fork-tender and nearly falling off the bone. Do not lift the lid during the first 6 hours on low or 3 hours on high. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker. Let the ribs rest in the sauce for 5 minutes. Using tongs, carefully transfer the ribs to a serving plate, spooning some of the pineapple and sauce over the top. Let the meat rest at least 3 minutes before serving.
