Tips for success

To achieve an even deeper flavor, you can sear the beef chuck roast in a hot pan with a little oil before placing it in the slow cooker. This step, while optional, adds a layer of complexity to the meat through the Maillard reaction. If you choose to sear, ensure the pan is very hot and brown the roast on all sides for about 2 to 3 minutes per side before proceeding with the achiote coating.

If you find the sauce is too thin after shredding the beef, you can leave the slow cooker lid off and turn the setting to high for the final 15 to 20 minutes. This allows some of the excess liquid to evaporate, concentrating the flavors and thickening the sauce. Watch it closely during this time to ensure the meat does not dry out, as the goal is a sauce that clings to the beef, not a dry meat.

Variations

  • Spicy Al Pastor: Add two finely chopped chipotle peppers in adobo sauce to the slow cooker before starting. This introduces a deeper, smokier heat that pairs perfectly with the sweetness of the pineapple and the earthiness of the achiote paste.
  • Citrus Infused: Replace the orange juice with a mixture of fresh lime and pineapple juice. This creates a more acidic profile that cuts through the richness of the beef chuck, making the final dish feel lighter and more refreshing.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze in a sealed container for up to 3 months.
Reheat
Gently reheat in a skillet over medium heat with a splash of water or orange juice until warmed through.

Allow any leftovers to cool to room temperature for no more than 2 hours before transferring them to an airtight container. Properly stored, the shredded beef will maintain its quality in the refrigerator for up to 3 days.

For longer storage, the meat can be frozen in a freezer-safe bag or container, where it will remain at its best for up to 3 months. Always label your containers with the date to track freshness.

This recipe is excellent for make-ahead meals because the flavors often improve after sitting in the refrigerator overnight. You can cook the beef completely, shred it, and store it in its juices.

When ready to serve, simply reheat the desired portion in a skillet or microwave. This makes it a convenient option for busy weeknight dinners or for hosting gatherings where you want to minimize time in the kitchen.

Serving ideas

For a complete meal, serve these tacos alongside a simple side of lime-cilantro rice or a refreshing cabbage slaw to add crunch and acidity.

If you enjoy a bit of heat, provide a side of thinly sliced radishes or your favorite salsa verde to complement the smoky notes of the achiote. The goal is to provide a balanced spread that allows guests to customize their tacos with various textures and fresh toppings.

The presentation is key to the taco-stand experience. Arrange the shredded beef in a warm serving bowl and set up a taco bar with individual bowls for the onion, cilantro, and extra pineapple.

This allows everyone to assemble their tacos exactly to their liking. Ensure the tortillas are kept warm in a cloth-lined basket or a covered tortilla warmer to keep them soft and pliable throughout the meal.

Frequently asked questions

Can this recipe be made with pork instead of beef?
Yes, pork shoulder or Boston butt is an excellent alternative to beef chuck roast. The cooking time and method remain the same, as pork shoulder shares similar connective tissue properties that require slow cooking to become tender and succulent.
Is it necessary to rinse the beef before cooking?
No, rinsing raw beef is not recommended. It does not effectively remove bacteria and can actually splash pathogens onto your kitchen surfaces and utensils, increasing the risk of cross-contamination. Simply pat the meat dry with paper towels if necessary.
Why is the pineapple added at the beginning?
The pineapple is added at the start because it contains bromelain, an enzyme that tenderizes the beef during the long, slow-cooking process. As it breaks down, it also infuses the meat with a subtle sweetness that balances the savory achiote paste.

Ingredients

  • 3 lb beef chuck roast
  • 90 g red achiote paste
  • 300 g fresh pineapple chunks
  • 60 ml orange juice
  • 1 tbsp guajillo chili powder
  • 5 cloves garlic, minced
  • corn tortillas, for serving
  • onion, finely diced, for serving
  • fresh cilantro, chopped, for serving

Instructions

  1. Place the beef chuck roast into the basin of the slow cooker. Evenly coat the entire surface of the beef with the red achiote paste, ensuring all sides are covered. Scatter the minced garlic cloves over the beef.
  2. Arrange the fresh pineapple chunks around the beef in the slow cooker. Pour the orange juice over the top and sprinkle the guajillo chili powder evenly across the ingredients. Cover the slow cooker with the lid and cook on the low setting for 8 hours until the beef reaches 145°F (63°C). Let the meat rest for at least 3 minutes before proceeding.
  3. Once the cooking time is complete and the meat has rested for 3 minutes at 145°F (63°C), remove the beef from the slow cooker to a cutting board. Use two forks to shred the meat into ribbons. Return the shredded beef to the cooking liquid and toss to combine.
  4. Warm the corn tortillas on a dry skillet over medium heat. Fill each tortilla with a generous portion of the shredded Al Pastor beef. Top with additional fresh pineapple tidbits, finely diced onion, and chopped fresh cilantro before serving immediately.
