Tips for success

For the best flavor, sear the brisket in a hot skillet with a little oil before adding it to the slow cooker. This extra step adds a deep, caramelized crust that enhances the overall taste.

It's not required, but it's worth the few extra minutes. If you do sear, be sure to deglaze the pan with a splash of beef broth and add that liquid to the slow cooker for even more flavor.

The pepperoncini are essential—they provide a tangy, slightly spicy kick that cuts through the richness of the beef and gravy. If you prefer a milder flavor, remove the stems and seeds before adding them.

For a spicier version, add a spoonful of the pepperoncini brine to the pot. You can also chop the peppers before adding them if you want their flavor to permeate the meat more thoroughly.

Variations

  • Spicy Pepperoncini: Add 1–2 tablespoons of the pepperoncini brine to the slow cooker along with the peppers. This will intensify the tangy heat and make the gravy more assertive. Serve with extra pickled peppers on the side for those who like it hot.
  • Cheesy Brisket Sandwiches: After piling the beef onto the buns, top each with a slice of provolone or sharp cheddar. Place under the broiler for 1–2 minutes until the cheese melts and bubbles. This adds a creamy, salty layer that complements the tangy beef.
  • Beef and Noodles: Instead of serving on buns, toss the shredded beef and gravy with cooked egg noodles. The rich sauce coats the noodles, making a comforting one-bowl meal. Garnish with fresh parsley and a sprinkle of grated Parmesan.
  • Low-Carb Lettuce Wraps: For a lighter option, serve the shredded beef in large butter lettuce leaves instead of buns. Top with sliced pepperoncini and a drizzle of gravy. This keeps all the flavor while cutting down on carbs, perfect for a low-carb meal.

Store leftover shredded beef in an airtight container with some of the gravy. It will keep in the refrigerator for up to 4 days. The flavors continue to meld as it sits, making it even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if needed to loosen the gravy.

This recipe is perfect for making ahead. Prepare the brisket as directed and cook it through. Let it cool completely, then store the shredded beef and gravy in an airtight container in the refrigerator for up to 3 days.

Reheat gently before serving. You can also freeze the cooked brisket for up to 3 months; thaw overnight in the refrigerator before reheating.

Serving ideas

Pile the shredded beef onto toasted brioche slider buns for a classic sandwich. Add a slice of provolone or mozzarella and broil for a minute to melt, if desired.

Serve with pickles, coleslaw, or a simple green salad. The tangy gravy also works well over mashed potatoes, rice, or egg noodles, making this a versatile main dish.

For a heartier meal, serve the brisket over creamy polenta or roasted sweet potatoes. The rich gravy and tender meat pair beautifully with buttery, starchy sides. Leftover brisket can be used in tacos, quesadillas, or stuffed into baked potatoes. The possibilities are endless, and the flavor only gets better with time.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes, the brisket can be cooked in an Instant Pot on the pressure cook setting. Sear the brisket first, then add the remaining ingredients. Cook on high pressure for 60–70 minutes, then let the pressure release naturally for 15 minutes before shredding. The cooking time is much shorter, but the result will be tender and flavorful.
What if the brisket is not fork-tender after 8 hours?
If the brisket is still tough after 8 hours on low, it may need more time. Continue cooking for another 1–2 hours, checking periodically. The exact time depends on the size and thickness of the brisket, as well as the slow cooker model. The meat is ready when it shreds easily with a fork.
Can the pepperoncini be left out?
Yes, the pepperoncini can be omitted, but they add a distinctive tangy flavor and mild heat that balances the rich gravy. If you leave them out, consider adding a splash of vinegar or a few tablespoons of pickle juice to the pot to maintain some acidity. Without the peppers, the dish will be more savory and less bright.
Why is the gravy thin?
The gravy may be thin if there is excess liquid from the meat or if the slow cooker is not simmering enough to reduce the sauce. To thicken, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir into the gravy. Cook for 15–20 minutes more until thickened. Alternatively, remove the meat and simmer the liquid on the stovetop to reduce.
Can this be made with a different cut of beef?
Yes, other tough cuts like chuck roast or bottom round will work well. They have similar collagen content and become tender with slow cooking. Adjust the cooking time as needed; chuck roast may cook slightly faster. Avoid lean cuts like sirloin, which can dry out during the long cook.

Slow-Cooker Pepperoncini Ranch Brisket Sandwiches

Prep 10 minCook 8 hRest 10 minTotal 8 h 20 minServes 8
Slow-cooker beef brisket with pepperoncini and gravy, served on toasted brioche slider buns.

Ingredients

  • 3 1/2 lb beef brisket, trimmed
  • 1 oz dry ranch dressing mix
  • 1 oz dry au jus gravy mix
  • 10 whole pepperoncini peppers
  • 1 cup brown gravy
  • 4 tbsp unsalted butter, cut into pats
  • 8 brioche slider buns, toasted

Instructions

  1. Place the trimmed beef brisket flat in the bottom of a 7-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the brisket. Scatter the whole pepperoncini peppers over the meat.
  2. Pour the brown gravy over the seasoned brisket. Dot the top with the pats of unsalted butter. Do not stir; the layers will meld during cooking.
  3. Cover the slow cooker and cook on LOW for 8 to 10 hours, until the brisket is fork-tender and easily shreds. The internal temperature should read at least 145°F (63°C) for food safety, but it will likely be much higher after this long cook. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker and let the brisket rest in the hot liquid for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
  5. Using two forks, shred the beef directly in the slow cooker, mixing it with the gravy and peppers. The meat should pull apart easily into thick, juicy strands.
  6. Spoon the shredded beef generously onto toasted brioche slider buns. Top with a few pepperoncini from the pot and a drizzle of the gravy. Serve warm.
