Tips for success
For the best texture, use boneless skinless chicken thighs and keep them whole during cooking. They will become tender enough to shred with a fork at the end.
If you prefer larger chunks, leave them intact; if you want a more shredded texture, break them up gently before serving.
To make the sauce even richer, add a splash of heavy cream or a spoonful of cream cheese during the last 30 minutes of cooking. This will create an even more luxurious sauce. For extra heat, add more pickled jalapeños or a pinch of cayenne pepper.
Variations
- Add Black Beans: Stir in a can of drained black beans during the last 30 minutes of cooking for extra protein and fiber. The beans will absorb the sauce and add a hearty texture to the dish.
- Make It Milder: Use mild diced tomatoes instead of fire-roasted with green chiles, and replace the spicy pepper jack with regular Monterey jack cheese. Reduce the pickled jalapeños to 1/4 cup for a gentle heat.
- Use Chicken Breasts: Substitute boneless skinless chicken breasts for the thighs. Cook on low for 3-4 hours, checking for doneness at 3 hours. Shred the chicken and return to the sauce before serving.
- Add Corn: Stir in a cup of frozen or canned corn during the last 30 minutes of cooking. The corn adds a touch of sweetness and a pop of color that complements the spicy, creamy sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of chicken broth or water when reheating to loosen it. The flavors will continue to meld, making the leftovers even more delicious.
This dish can be assembled the night before and stored in the refrigerator, then cooked the next day. Simply layer all ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 4-5 hours, adding 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve the chicken and sauce over steamed Mexican rice or with warm tortilla chips for dipping. The creamy sauce is perfect for sopping up with chips.
A side of refried beans or a simple green salad would also complement the dish well. Garnish with fresh cilantro, diced avocado, or a squeeze of lime, if desired.
This dish is hearty enough to be a main course on its own, but it also works well as a filling for tacos or burritos.
The saucy chicken can be spooned into warm tortillas and topped with shredded lettuce, diced tomatoes, and sour cream. For a low-carb option, serve over cauliflower rice or with extra vegetables.
