Tips for success

For the best texture, don't over-stir the pot after shredding. Gently fold the chicken into the sauce so it stays in hearty chunks rather than turning into mush. If you like a smoother sauce, you can use an immersion blender to puree some of the beans before serving, but that changes the rustic character of the dish.

This recipe is incredibly adaptable. If you have leftover roasted chicken, you can skip the slow cooking and simply warm it in the sauce on the stovetop.

For a vegetarian version, replace the chicken with extra pinto beans or a bag of frozen meatless crumbles. The sauce and cheese are the stars, so the protein is flexible.

Variations

  • Spicy Green Enchilada Version: Swap the red enchilada sauce for green enchilada sauce and use shredded Monterey Jack instead of pepper jack. The verde sauce adds a tangy, tomatillo flavor that pairs beautifully with the creamy queso.
  • Add Corn and Black Beans: Stir in a cup of frozen corn kernels and a can of drained black beans along with the pinto beans. The extra vegetables add sweetness and texture, making the dish even more substantial.
  • Chicken Breast Option: Use boneless skinless chicken breasts instead of thighs. Reduce the cook time to 2–3 hours on low, and check for doneness at 165°F (74°C). Shred and return to the sauce.
  • Top with Fresh Toppings: After serving, sprinkle with chopped cilantro, diced red onion, sliced jalapeños, and a squeeze of lime juice. The fresh, bright flavors cut through the richness of the cheese and sauce.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water to loosen the sauce.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop, adding a splash of chicken broth or water if the sauce has thickened too much.

You can assemble the entire dish (without cooking) up to 24 hours in advance. Place the chicken, sauce, beans, and cheeses in the slow cooker insert, cover, and refrigerate.

When ready to cook, place the insert in the slow cooker and cook on low for 5–6 hours, adding 30 minutes to the time to account for the chilled ingredients.

Serving ideas

Serve this slow-cooker chicken over steamed Mexican rice or cauliflower rice for a low-carb option.

The saucy chicken is also delicious scooped into warm corn or flour tortillas, topped with fresh pico de gallo, avocado, or a dollop of sour cream. For a crunchy contrast, offer tortilla chips on the side for dipping into the rich, cheesy sauce.

This dish is hearty enough to be a main course on its own, but it also pairs well with a simple green salad with lime vinaigrette or a side of roasted vegetables.

For a festive presentation, set out bowls of toppings—chopped cilantro, diced red onion, sliced jalapeños, and extra cheese—so everyone can customize their plate.

Frequently asked questions

Can this slow-cooker chicken be made ahead of time?
Yes, the entire dish can be assembled up to 24 hours in advance and stored in the refrigerator. When ready to cook, place the slow cooker insert in the base and cook on low for 5 to 6 hours, adding about 30 minutes to the time to account for the cold ingredients. Leftovers also keep well in the fridge for up to 4 days.
Why is the sauce watery after cooking?
A watery sauce can result from using undrained pinto beans or from lifting the lid too often, which releases steam and prevents proper reduction. To fix it, remove the lid and cook on high for 15–20 minutes to let excess liquid evaporate. Always drain and rinse canned beans thoroughly.
Can this recipe be made with chicken breasts instead of thighs?
Yes, but chicken breasts cook faster and can dry out if left too long. Use boneless skinless breasts and reduce the cook time to 2–3 hours on low. Check the internal temperature reaches 165°F (74°C) before shredding. For best results, add the breasts whole and shred them after cooking.
Is this dish very spicy?
The heat level depends on the enchilada sauce and pepper jack cheese you choose. Standard red enchilada sauce is mildly spicy, and pepper jack adds a moderate kick. For a milder version, use mild enchilada sauce and substitute Monterey Jack for the pepper jack. For extra heat, add diced jalapeños or a splash of hot sauce.
Can this be frozen for later?
Absolutely. Let the cooked dish cool completely, then transfer to a freezer-safe container. It can be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating on the stovetop or microwave. The sauce may thicken slightly upon reheating; add a splash of chicken broth to loosen it.

Ingredients

  • 6 boneless skinless chicken thighs
  • 1 1/2 cups red enchilada sauce
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup queso blanco dip
  • 1 cup shredded pepper jack cheese

Instructions

  1. Place the chicken thighs in an even layer in the bottom of the slow cooker. Pour the red enchilada sauce over the chicken, then add the drained pinto beans, spreading them evenly. Spoon the queso blanco dip over the top, then sprinkle with the shredded pepper jack cheese.
  2. Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and easily shreds with a fork. The sauce will be bubbly and the cheese melted into a rich, creamy gravy.
