Before you start

Before you start, make sure your slow cooker is clean and ready. If using canned pinto beans, drain and rinse them in a colander under cold water to remove excess sodium. Measure out the enchilada sauce, queso blanco, and shredded cheese.

Pat the chicken thighs dry with paper towels—this helps the sauce cling better. You don't need to preheat the slow cooker; it will heat up gradually as it cooks. Have a serving spoon and a pair of forks ready for shredding the chicken at the end.

Ingredients at a glance (5)
  • 6 boneless skinless chicken thighs
  • 1 1/2 cups red enchilada sauce
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup queso blanco dip
  • 1 cup shredded pepper jack cheese

Instructions

Layer Everything In

  1. Layer the Chicken and Sauces
Place the chicken thighs in an even layer in the bottom of the slow cooker. Pour the red enchilada sauce over the chicken, then add the drained pinto beans, spreading them evenly. Spoon the queso blanco dip over the top, then sprinkle with the shredded pepper jack cheese.
Look for The slow cooker should look layered: chicken on the bottom, sauce and beans in the middle, cheese on top.
Tip No need to stir—layering keeps the chicken submerged and the cheese from sticking to the sides.

After layering, the slow cooker will look like a colorful mosaic: golden chicken at the bottom, red sauce and beans in the middle, and a white and orange cheese topping. The queso blanco will be thick and spoonable, while the pepper jack is scattered in shreds. Everything is ready to cook—no stirring needed.

Slow-Cook to Perfection

  1. Slow-Cook Until Tender
Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and easily shreds with a fork. The sauce will be bubbly and the cheese melted into a rich, creamy gravy.
Look for The sauce is bubbling gently at the edges and the chicken is fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking—each peek adds 20 minutes to the cook time.

After 4–5 hours on low, the kitchen will smell of warm chili and melted cheese. The sauce will be bubbling gently around the edges, and the cheese will have melted into a creamy, unified sauce.

The chicken should be so tender that a fork slides in with no resistance. The beans will be soft and infused with the sauce.

Shred and Serve

  1. Shred and Serve
Using two forks, shred the chicken thighs directly in the slow cooker, stirring to coat with the sauce. Serve hot over Mexican rice with tortilla chips on the side, or spoon into warm tortillas.
Look for The chicken shreds easily and the sauce is thick and velvety.
Tip For extra richness, stir in a handful of fresh cilantro or a squeeze of lime just before serving—if you like.

Once shredded, the chicken will be coated in a thick, velvety red sauce with strands of melted cheese stretching from the spoon. The beans are scattered throughout, adding creaminess and texture. The whole dish is steaming and fragrant. Serve immediately over rice or with chips for scooping.

Common mistakes

One common mistake is lifting the lid too often to check on the food. Every time you open the slow cooker, heat escapes and adds 20 minutes to the cooking time. Trust the recipe and resist the urge to peek.

Another mistake is using chicken breasts instead of thighs—breasts can dry out and become stringy. Stick with thighs for the most tender result. Also, don't skip draining the pinto beans; the extra liquid can make the sauce watery.

How to tell it’s done

The dish is done when the chicken is fork-tender and easily shreds apart. Insert a meat thermometer into the thickest part of a thigh—it should read at least 165°F (74°C). The sauce should be bubbly and thickened, with the cheese fully melted into a smooth, creamy gravy.

If the sauce seems too thin, remove the lid and cook on high for an additional 15–20 minutes to let some liquid evaporate. If it's too thick, stir in a splash of chicken broth or water.

  • Poultry: 165°F (74°C) in the thickest part
