Before you start

Before you start, make sure your slow cooker is clean and ready. If your ribs are in a long rack, you may need to cut them in half to fit.

Have your peaches sliced (if using fresh) and measure out the bourbon and BBQ sauce. No need to preheat anything—just layer the ingredients and walk away.

Ingredients at a glance (4)
  • 2 lb baby back pork ribs
  • 2 cups sliced ripe peaches (fresh or frozen)
  • 1/4 cup bourbon
  • 1 cup honey-hickory barbecue sauce

Instructions

Layer and Slow-Cook

  1. Layer the Ribs and Toppings
Place the baby back ribs in the bottom of a 6-quart slow cooker, arranging them in a single layer if possible, cutting the racks to fit if needed. Scatter the sliced peaches evenly over the ribs, then pour the bourbon over the top. Drizzle the honey-hickory barbecue sauce generously over the entire surface, ensuring the ribs are well coated.
Look for The ribs are nestled in the slow cooker, peaches and bourbon scattered on top, and the BBQ sauce covers the surface.
Tip If the ribs are too long, cut the rack in half to fit comfortably in the slow cooker.
  2. Cover and Cook Low
Cover the slow cooker with the lid and set it to cook on low heat for 6 to 7 hours, or until the meat is tender and easily pulls away from the bone. Avoid opening the lid during cooking to maintain the heat and moisture. Let it rest for 3 minutes before slicing.
Look for The slow cooker is covered and cooking; the aroma of peaches and bourbon will start to fill the kitchen.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Cooking on low yields the most tender ribs. Resist the urge to peek—every time the lid lifts, heat escapes.

After layering the ribs, peaches, bourbon, and BBQ sauce, the slow cooker is full and ready.

The sauce should coat the ribs evenly, and the peaches should be scattered throughout. As it cooks, the aroma of sweet peaches and smoky BBQ will fill your kitchen.

Test and Rest

  1. Check for Tenderness
After 6 hours, carefully open the lid and test the ribs with a fork. The meat should be tender and nearly falling off the bone. If not yet tender, continue cooking for another 30 to 60 minutes. When done, the internal temperature of the meat should read at least 145°F (63°C) on an instant-read thermometer. Let it rest for 3 minutes before slicing.
Look for The ribs are fork-tender, the sauce has thickened slightly, and the peaches are soft and caramelized.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip For fall-off-the-bone texture, cook until the meat easily separates from the bone with a gentle twist.
  2. Rest the Ribs
Turn off the slow cooker and let the ribs rest in the sauce for 10 minutes before serving. This allows the juices to redistribute and makes the meat even more succulent.
Look for The ribs are resting in the warm sauce, absorbing all the flavors.
Tip Resting is key for juicy meat—don't skip this step.

After 6 hours, the ribs should be fork-tender and the sauce slightly thickened. The peaches will have softened and melded into the sauce. The meat should easily pull away from the bone. Rest the ribs for 10 minutes to lock in the juices.

Serve

  1. Serve and Enjoy
Using tongs or a fork, carefully lift the ribs from the slow cooker and place them on a serving platter. Spoon some of the peaches and sauce over the top. Serve hot, with extra sauce on the side if desired.
Look for The ribs are glistening with sauce, the peaches are tender, and the dish is ready to serve.
Tip For a polished look, arrange the ribs on a platter and spoon the peaches and sauce over them.

The ribs are ready to serve, glistening with a caramelized glaze. The peaches are tender and sweet, and the sauce is rich and flavorful. Plate the ribs and spoon extra sauce and peaches over the top for a beautiful, appetizing presentation.

Common mistakes

One common mistake is opening the slow cooker too often, which lets out heat and extends cooking time.

Another is using too much liquid—the peaches release juice, so you don't need to add extra broth or water. Finally, don't rush the cooking; low and slow is the key to tender ribs.

How to tell it’s done

The ribs are done when they are fork-tender and the meat easily pulls away from the bone. The internal temperature should read at least 145°F (63°C) on an instant-read thermometer.

For fall-off-the-bone texture, cook until the meat nearly slips off the bone when lifted with tongs.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
