Before you start

Ensure your pork loin is fully thawed if frozen. Take the meat out of the refrigerator approximately 20 to 30 minutes before you begin to help it come closer to room temperature, which encourages more uniform cooking.

Prepare your measuring tools and have your Parmesan, basil, and honey soy sauce ready to go. Clear enough counter space around your slow cooker to ensure you can work comfortably without the risk of bumping into the appliance while you are seasoning the roast.

Ingredients at a glance (4)
  • 2 lb boneless pork loin roast
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp dried basil
  • 1/2 cup honey soy sauce mixture

Instructions

Assembly and seasoning

  1. Prepare the slow cooker
Place the whole boneless pork loin roast into the ceramic insert of the slow cooker. Ensure the meat is lying flat for even cooking throughout the process.
Look for The pork loin should sit flat at the bottom of the slow cooker insert.
Tip Bring the pork loin to room temperature for about 20 minutes before placing it in the slow cooker to ensure more even cooking.

The pork roast is placed firmly in the slow cooker insert. The Parmesan is evenly distributed over the top, followed by the dried basil and the honey soy sauce. The ingredients are layered to allow the flavors to penetrate the meat as it begins to heat up. Ensure the roast is centered so that the heat distributes evenly from all sides of the ceramic insert.

Slow cooking process

  1. Season the roast
Shower the grated Parmesan cheese evenly over the top of the pork loin. Sprinkle the dried basil over the cheese, then pour the honey soy sauce mixture over the entire roast, ensuring it coats the surface well.
Look for The Parmesan should cover the top of the pork, and the liquid should settle around the sides of the roast.
Tip Use a small pitcher to pour the sauce slowly to avoid splashing the sides of the slow cooker insert.

During the cooking phase, the slow cooker maintains a consistent, low temperature. You will notice the aroma of the honey and basil filling the kitchen.

The pork begins to braise in the liquid, and the Parmesan starts to melt into the sauce. Check that the lid is tightly sealed to maintain the necessary moisture and heat levels throughout the entire duration of the cooking.

Resting and slicing

  1. Cook and serve
Cover the slow cooker and cook on low for 4 hours until the internal temperature of the pork reaches 145°F (63°C). Once finished, remove the pork and let it rest for at least 5 minutes before slicing and serving with the sauce.
Look for The pork should be tender and easily sliced, with the sauce thickened into a rich glaze.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Check for doneness using a meat thermometer inserted into the thickest part of the roast to ensure it reaches the safe internal temperature.

After removing the pork, it should look glistening with a dark, rich glaze. The meat should be tender enough to slice easily without falling apart. The sauce at the bottom of the slow cooker should be reduced and flavorful. Let the roast rest on a cutting board for at least 5 minutes before slicing to ensure the internal juices are locked into the meat.

Common mistakes

A common mistake is overcooking the pork loin, which can cause it to become dry even in a slow cooker. Always rely on a meat thermometer rather than just the clock, as cooking times can vary based on the specific shape and density of the roast.

Another error is adding too much liquid; the pork will release its own juices, so avoid drowning the meat, as this will prevent the honey soy glaze from thickening properly during the cooking cycle.

How to tell it’s done

The pork loin is properly cooked when it reaches an internal temperature of 145°F (63°C). Use a meat thermometer inserted into the thickest part of the roast to verify this. The meat should be firm to the touch but yielding, and the sauce should have reduced into a slightly thick, pourable consistency.

Allowing the meat to rest for at least 5 minutes after cooking is crucial, as it lets the juices redistribute throughout the roast, ensuring every slice remains moist and tender.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
