Tips for success
For the best flavor, use a good-quality apple cider vinegar with a bright, fruity acidity. The vinegar mellows during the long cook, so don't reduce the amount. If you prefer a more pronounced tang, add a splash of fresh vinegar just before serving. The brown sugar can be adjusted to taste—some might like it a bit sweeter.
To make the dish even heartier, serve the chicken and cabbage over mashed potatoes, egg noodles, or spaetzle. The cooking liquid is delicious spooned over the top.
For a thicker sauce, remove the chicken and cabbage, then simmer the liquid on the stovetop until reduced. Always let leftovers cool for no more than 2 hours before refrigerating.
Variations
- Apple-Bacon Twist: For a smokier flavor, cook 4 slices of bacon until crisp, crumble, and sprinkle over the finished dish. The bacon's saltiness complements the sweet cabbage and adds a savory depth.
- Spiced with Cloves: Add 4 whole cloves and a star anise along with the caraway seeds. These warm spices enhance the Oktoberfest character and infuse the cabbage with a more complex aroma.
- Vegetarian Version: Replace the chicken drumsticks with 2 cans of drained chickpeas or 1 1/2 cups of cooked lentils. Use vegetable broth instead of chicken broth, and reduce the cooking time to 4 hours on low.
- Sweet and Sour Red Cabbage: Increase the brown sugar to 3 tablespoons and add 1/4 cup of dried cranberries. This makes the cabbage extra sweet-tart, perfect for serving alongside roasted pork or sausages.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little broth or water to keep the cabbage moist.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The cabbage will continue to absorb the liquid, becoming even more tender.
Reheat gently on the stovetop or in the microwave, adding a splash of broth or water if needed to loosen the sauce. Cool leftovers within 2 hours of cooking and refrigerate promptly.
This dish can be assembled the night before. Place the drumsticks in the slow cooker, top with cabbage and apples, and sprinkle with seasonings. Pour the vinegar and broth over, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. The cold start may add about 30 minutes to the cooking time, so check the chicken temperature before serving.
Serving ideas
Serve the chicken drumsticks and red cabbage straight from the slow cooker, with the braising liquid spooned over each portion.
The dish is satisfying on its own, but it shines alongside crusty bread, buttered noodles, or a side of German potato salad. A dollop of sour cream or a sprinkle of fresh parsley can brighten the plate, though the video keeps it simple.
For a festive presentation, arrange the cabbage on a platter and nestle the drumsticks on top. Garnish with a few extra apple slices or a light dusting of caraway seeds. This meal pairs well with a crisp lager or a dry Riesling. Leftovers are just as good the next day, served cold or reheated gently.

Slow Cooker Oktoberfest Chicken Drumsticks and Red Cabbage

Ingredients
- 3 lb bone-in skin-on chicken drumsticks
- 1 medium head red cabbage, shredded (about 2 lb)
- 2 medium apples, cored and sliced
- 2 tsp caraway seeds
- 2 tbsp brown sugar, packed
- 1/4 cup apple cider vinegar
- 1/2 cup chicken broth
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the chicken drumsticks in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Season with kosher salt and black pepper.
- Pile the shredded red cabbage and apple slices on top of the chicken. They can mound up; they will shrink as they cook.
- Sprinkle the caraway seeds and brown sugar over the cabbage and apples. Pour the apple cider vinegar and chicken broth over everything.
- Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through.
- Insert an instant-read thermometer into the thickest part of a drumstick without touching the bone. The temperature must read at least 165°F (74°C).
- Turn off the slow cooker. Let the chicken rest in the liquid for 5 minutes before serving. Use tongs to transfer the drumsticks and cabbage to a platter, spooning some of the cooking liquid over the top.
