Tips for success
For the best flavor, use a high-quality salsa that you enjoy eating on its own. The salsa is a major flavor component, so a dull or overly acidic salsa will show through. You can also use homemade salsa if you have it on hand. If you prefer a smokier taste, add a teaspoon of smoked paprika or chipotle powder along with the taco seasoning.
To make the dish even more substantial, you can add a can of drained corn or a diced bell pepper along with the beans. This adds sweetness and crunch. If you like a little heat, serve with sliced jalapeños or a drizzle of hot sauce at the table. The leftovers are excellent in tacos, burritos, or over nachos – just reheat gently and enjoy.
Variations
- Spicy Chorizo Version: Brown 8 oz fresh chorizo in a skillet and drain off the fat. Layer the cooked chorizo with the chicken thighs, then proceed with the recipe. The chorizo adds a smoky, spicy depth that pairs wonderfully with the cheese and beans.
- Veggie-Packed Version: Add a diced bell pepper, a small diced zucchini, and a cup of frozen corn along with the beans. The vegetables will soften during cooking and add color and nutrition. No other changes needed – just stir them in with the salsa.
- Green Salsa Version: Replace the red salsa with a tomatillo-based green salsa for a brighter, tangier flavor. The green salsa pairs beautifully with the Oaxaca cheese and beans. You might also add a handful of chopped fresh cilantro before serving for a fresh finish.
- Creamy Version: Stir in 4 oz of softened cream cheese during the last 30 minutes of cooking for an extra-creamy sauce. This makes the dish richer and more indulgent. Serve over rice or with tortilla chips for dipping.

Reheat in the microwave or in a saucepan over medium heat, adding a splash of water or salsa if the mixture seems dry. The dish can also be frozen for up to 3 months – thaw overnight in the refrigerator before reheating.
This recipe is perfect for make-ahead meal prep. You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker base and cook on low as directed, adding about 30 minutes to the cooking time because the ingredients start cold. Alternatively, cook the full recipe, let it cool, and store in portions for quick lunches or dinners throughout the week.
Serving ideas
Serve the chicken mixture over Spanish rice, as shown in the video, for a complete and satisfying meal. The rice soaks up the flavorful sauce, and the cheese adds richness.
You can also serve it in warm corn or flour tortillas as tacos, or over a bed of lettuce for a low-carb option. A dollop of sour cream or a sprinkle of fresh cilantro would be a lovely addition, though they are not required.
For a family-style dinner, place the slow cooker on the table and let everyone serve themselves. Provide a stack of warm tortillas, extra salsa, and lime wedges for squeezing.
The dish is hearty enough to stand alone, but it also pairs well with a simple green salad or grilled vegetables. The leftovers are great for meal prep – portion them into containers with rice for easy grab-and-go lunches.

Slow-Cooker Oaxaca Queso Taco Pinto Chicken Thighs

Ingredients
- 2 lb boneless skinless chicken thighs
- 2 tbsp taco seasoning mix
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 1/2 cups chunky salsa
- 8 oz Oaxaca cheese, shredded
- 8 oz Mexican four-cheese blend, shredded
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Sprinkle the taco seasoning evenly over the chicken. Spoon the drained pinto beans over the top, then pour the salsa over everything, spreading it into an even layer.
- Sprinkle the shredded Oaxaca cheese and Mexican four-cheese blend evenly over the top of the salsa layer. Cover the slow cooker with the lid.
- Cook on low for 4 hours, or until the chicken is tender and easily shreds with a fork. The cheese will melt and blister in spots, and the sauce will be thick and bubbling.
- After 4 hours, check the internal temperature of the thickest chicken thigh with an instant-read thermometer. It must read at least 165°F (74°C). If not, continue cooking in 30-minute increments until it does.
- Using two forks, shred the chicken thighs directly in the slow cooker, mixing them into the salsa-bean sauce. The meat should pull apart easily. Leave some chunks for texture if desired.
- Spoon the steaming chicken mixture over warm Spanish rice on plates. Use a slotted spoon to control the amount of sauce. Serve hot, with extra cheese or salsa on the side if desired.
