Tips for success

For the best texture, shred the chicken while it’s still warm—it pulls apart more easily and absorbs the cheesy sauce better. If you prefer chunkier pieces, use a fork to break it into larger chunks rather than fine shreds.

You can also use a hand mixer on low speed for a quicker shred, but be careful not to overmix and turn the chicken into a paste.

This recipe is endlessly customizable. Add a can of drained black beans or corn before cooking for extra substance. For a smoky kick, sprinkle in chipotle powder or smoked paprika.

If you like it spicier, toss in sliced jalapeños or a dash of hot sauce. The base recipe is mild, so it’s family-friendly, but you can easily dial up the heat to your liking.

Variations

  • Spicy Chipotle: Add 1–2 minced chipotle peppers in adobo sauce along with the lime juice. This adds a smoky, spicy depth that pairs beautifully with the cheese.
  • Black Bean & Corn: Stir in 1 can of drained black beans and 1 cup of frozen corn before cooking. This adds heartiness and a touch of sweetness.
  • Chicken Thighs: Substitute boneless skinless chicken thighs for breasts. Thighs are more forgiving and stay juicy even if cooked a bit longer.
  • Extra Cheesy: Increase both cheeses to 12 oz each for an even more decadent, gooey sauce. Reduce lime juice to 3 tablespoons to keep the balance.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium-low heat, stirring frequently, until hot. Add a tablespoon of water or broth to restore creaminess.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. The chicken will keep its moisture and flavor well. Reheat gently in the microwave or on the stovetop, adding a splash of chicken broth or water if the mixture seems dry.

You can assemble the entire slow cooker the night before: place the chicken, peppers, onions, lime juice, and cheese in the insert, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook on low as directed. This makes it even easier to get dinner going on a busy day.

Serving ideas

Serve the Oaxaca fajita chicken over steamed white or Spanish rice to soak up the creamy cheese sauce.

Warm tortillas are another classic option—use corn or flour, and fill with the chicken, then top with fresh cilantro, diced avocado, or a dollop of sour cream if desired. The dish is substantial enough to stand alone, but a simple side salad adds freshness.

For a fun family-style meal, set out the chicken with warm tortillas, lime wedges, shredded lettuce, pico de gallo, and extra cheese, letting everyone build their own tacos or burritos.

The leftovers are also great in quesadillas or as a topping for nachos. Just reheat gently and enjoy the cheesy goodness all over again.

Frequently asked questions

Can the chicken be cooked on high instead of low?
Yes, you can cook on high for 2.5 to 3 hours, but the chicken may be slightly less tender. Low heat is recommended for the best texture and to allow the cheese to melt slowly without separating.
Why is the cheese sauce grainy?
Graininess usually comes from pre-shredded cheese that contains anti-caking agents like cellulose. Shredding the cheese yourself from a block will give a smoother, creamier sauce. Also, avoid boiling the mixture; gentle heat is key.
Can this recipe be made without a slow cooker?
Yes, you can make it in a Dutch oven at 325°F (165°C) for about 2 hours, or until the chicken is tender. Cover tightly and check periodically, adding a splash of broth if needed.
Is it possible to add more vegetables?
Absolutely. Sliced mushrooms, zucchini, or even diced tomatoes can be added in the first layer. Just keep the total vegetable volume similar so the dish doesn’t become too watery.
What if the chicken is still pink after the recommended time?
If the chicken hasn’t reached 165°F (74°C) or doesn’t shred easily, continue cooking on low, checking every 30 minutes. Slow cookers vary, so cooking times are approximate.

Slow cooker filled with shredded chicken, peppers, and melted Oaxaca cheese

Ingredients

  • 3 lb boneless skinless chicken breasts
  • 3 mixed bell peppers (red, yellow, orange), sliced
  • 1 large red onion, thinly sliced
  • 1/4 cup fresh lime juice
  • 8 oz Oaxaca cheese, shredded
  • 8 oz Mexican four-cheese blend, shredded

Instructions

  1. Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced bell peppers and red onion over the chicken. Pour the fresh lime juice evenly over the vegetables and chicken.
  2. Sprinkle the shredded Oaxaca cheese and the Mexican four-cheese blend evenly over the chicken and vegetables, covering the surface completely.
  3. Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is tender and easily shreds with a fork. The cheese will melt and bubble around the edges.
  4. Turn off the slow cooker. Using two forks, shred the chicken directly in the pot, mixing it with the melted cheese, peppers, and onions. Stir until well combined.
  5. Spoon the hot chicken mixture over steamed rice or into tortillas. Serve immediately, with extra lime wedges if desired.
