Before you start

Before you begin, make sure your slow cooker is clean and dry. Slice the bell peppers and onion into thin strips—this helps them cook down evenly. Juice fresh limes to get 1/4 cup of juice. Shred the Oaxaca cheese and measure out the Mexican cheese blend.

If you plan to serve the chicken over rice, start that before you assemble the slow cooker so everything is ready at the same time. You’ll also want a pair of forks for shredding and a serving spoon.

Ingredients at a glance (6)
  • 3 lb boneless skinless chicken breasts
  • 3 mixed bell peppers (red, yellow, orange), sliced
  • 1 large red onion, thinly sliced
  • 1/4 cup fresh lime juice
  • 8 oz Oaxaca cheese, shredded
  • 8 oz Mexican four-cheese blend, shredded

Instructions

Layer and Cover

  1. Layer the Raw Ingredients
Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the sliced bell peppers and red onion over the chicken. Pour the fresh lime juice evenly over the vegetables and chicken.
Look for The slow cooker is filled with raw chicken and vegetables, ready for the cheese.
Tip Arrange the chicken evenly so it cooks uniformly. No need to stir.
  2. Top with Cheeses
Sprinkle the shredded Oaxaca cheese and the Mexican four-cheese blend evenly over the chicken and vegetables, covering the surface completely.
Look for A thick blanket of shredded cheese covers the chicken and peppers.
Tip Use a generous hand; the cheese melts into a creamy sauce as it cooks.

After this phase, the slow cooker contains raw chicken, peppers, onions, lime juice, and a thick layer of shredded cheese on top.

The cheese should completely cover the chicken and vegetables, creating a snowy blanket. There is no need to stir; the layers will meld during cooking. The slow cooker is ready to turn on.

Low and Slow

  1. Cook Low and Slow
Cover the slow cooker and cook on LOW for 4 to 5 hours, or until the chicken is tender and easily shreds with a fork. The cheese will melt and bubble around the edges.
Look for After 4 hours, the chicken should be fork-tender and the cheese fully melted.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist lifting the lid; each peek adds cooking time.
  2. Shred the Chicken
Turn off the slow cooker. Using two forks, shred the chicken directly in the pot, mixing it with the melted cheese, peppers, and onions. Stir until well combined.
Look for The chicken shreds easily and is coated in a creamy, cheesy sauce.
Tip Shred while still warm for the best texture.

After 4 to 5 hours on low, the cheese has melted into a bubbling, golden sauce, and the chicken is fork-tender. The aroma is rich and cheesy with a hint of lime. The peppers and onions have softened and released their juices, creating a saucy base. The chicken should easily shred when pressed with a fork.

Shred and Serve

  1. Serve Hot
Spoon the hot chicken mixture over steamed rice or into tortillas. Serve immediately, with extra lime wedges if desired.
Look for Steam rises from the cheesy chicken as it is served.
Tip For a low-carb option, serve in lettuce cups.

Once shredded and stirred, the chicken is coated in a creamy, cheesy sauce with visible pieces of pepper and onion. The mixture is hot and steamy, with a thick, spoonable consistency. It should be served immediately over rice or in tortillas, with the cheese stretching as you lift it.

Common mistakes

A common mistake is lifting the lid too often, which lets heat escape and extends the cooking time. Resist the urge to stir—everything will come together at the end. Another mistake is using pre-shredded cheese that contains anti-caking agents; this can result in a gritty texture.

Also, don’t overcook the chicken: while slow cookers are forgiving, leaving it on high for too long can dry out the meat. Finally, avoid adding extra liquid—the chicken and vegetables release enough moisture to create a sauce.

How to tell it’s done

The chicken is done when it shreds easily with a fork and reaches an internal temperature of 165°F (74°C). The cheese should be fully melted and slightly golden around the edges, and the peppers and onions should be soft but not mushy.

If the mixture looks too liquidy, let it cook uncovered for an additional 15–30 minutes to thicken. The dish is ready to serve as soon as the chicken is shreddable and the sauce has a creamy consistency.

  • Poultry: 165°F (74°C) in the thickest part
