Tips for success
For the best flavor, choose a chuck roast with good marbling—the fat renders during cooking and keeps the meat moist. If you have time, sear the roast in a hot skillet before adding it to the slow cooker; this adds a deeper color and flavor, though it's not required.
Use low sodium onion soup mix if you are watching salt, and adjust seasoning at the end. The mushrooms can be left whole if they are small; halving them allows them to absorb more gravy.
To make the gravy richer, you can stir in a tablespoon of cornstarch mixed with an equal amount of cold water at the end and let it simmer for a few minutes until thickened.
If you prefer a smoother sauce, remove the mushrooms and blend them with some of the liquid, then return to the pot. Always taste and adjust seasoning before serving—the soup mix may be salty enough on its own.
Variations
- Add Root Vegetables: Toss peeled and chunked carrots, potatoes, or parsnips into the slow cooker along with the mushrooms. They will absorb the savory gravy and become tender. Adjust the cooking time if needed for larger chunks.
- Spicy Kick: Add a sliced jalapeño or a teaspoon of red pepper flakes along with the onion soup mix for a subtle heat. The spice will mellow during cooking and add a pleasant warmth to the gravy.
- Red Wine Gravy: Replace 1/2 cup of the cooking liquid with dry red wine, such as Merlot or Cabernet Sauvignon. The wine adds depth and complexity to the gravy. Add it in the last hour of cooking to preserve its flavor.
- Herb Swap: If you don't have garlic-herb butter, use 4 tablespoons of regular butter and add 2 minced garlic cloves and 1 teaspoon of dried thyme or rosemary directly to the slow cooker. The flavor will be just as delicious.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water or broth if needed.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little water or broth to loosen the gravy if needed.
Store leftover beef and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even tastier the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the gravy has thickened too much.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. This is great for busy mornings. The cooked beef also freezes well—see freezer instructions.
Serving ideas
Serve the shredded beef over a bed of warm buttered egg noodles, letting the gravy soak into the noodles.
A sprinkle of fresh parsley adds a pop of color and freshness, though it's optional. This dish pairs well with a simple green salad or steamed green beans to balance the richness.
For a heartier meal, pile the beef onto toasted crusty bread or into soft rolls for a decadent sandwich. You can also serve it over mashed potatoes or creamy polenta. The gravy is the star, so have extra bread on hand to mop up every last bit.

Slow-Cooker Mushroom Garlic Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 4 tbsp garlic-herb compound butter, sliced into medallions
- Buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the bottom of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the roast.
- Place the garlic-herb compound butter medallions evenly across the top of the roast. They will melt as the slow cooker heats, basting the meat and creating a rich gravy.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shreds. The mushrooms will soften and release their juices, blending with the butter and soup mix into a savory gravy. Let it rest for 3 minutes before slicing.
- Once the roast is tender, transfer it to a cutting board. Let it rest for at least 3 minutes, then shred the beef using two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the gravy.
- Spoon the hot shredded beef and gravy over warm buttered egg noodles. Serve immediately.
