Tips for success
For the most flavorful result, choose a chuck roast with good marbling. The fat renders during cooking and enriches the sauce.
If you prefer a thicker gravy, you can remove the beef and mushrooms, then simmer the sauce on the stovetop for a few minutes to reduce it. Or mix a tablespoon of cornstarch with water and stir it into the hot liquid.
This recipe is incredibly forgiving. If you don’t have whole-grain Dijon, smooth Dijon works just as well. You can also add a splash of Worcestershire sauce for extra depth, though it’s not necessary.
The mushrooms can be quartered if they’re large, and you can add a sliced onion if you like — just adjust the liquid slightly.
Variations
- Add Carrots and Potatoes: In the last 2 hours of cooking, add peeled baby carrots and halved baby potatoes to the slow cooker. They’ll absorb the gravy and become tender, making it a complete one-pot meal.
- Spicy Kick: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper along with the onion soup mix for a smoky, spicy twist. You can also stir in a chopped chipotle pepper in adobo sauce.
- Herb Infusion: Add 2 sprigs of fresh thyme and 1 sprig of rosemary to the pot before cooking. Remove the sprigs before shredding. The herbs add an earthy, aromatic note to the gravy.
- Creamy Mushroom Swap: Use a can of condensed cream of mushroom soup instead of the sour cream and au jus. This simplifies the ingredient list and gives a similar creamy texture, though the flavor will be more mushroom-forward.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The gravy will thicken when chilled; add a splash of broth when reheating.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, until warmed through. Add a little beef broth or water if the gravy is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the gravy will thicken as it cools.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if needed to loosen the sauce.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate overnight. In the morning, place the insert in the slow cooker base and cook as directed. This is a great make-ahead meal for busy weekdays.
Serving ideas
Serve this roast over steamed white rice to soak up the creamy gravy. Mashed potatoes or egg noodles are also excellent choices. The dish is rich and satisfying on its own, but a simple green salad or steamed vegetables on the side adds freshness.
For a low-carb option, skip the rice and serve the beef and mushrooms as-is, or over cauliflower rice. The gravy is delicious over roasted vegetables too.
Leftovers make fantastic sandwiches — pile the shredded beef on a crusty roll and top with a little extra gravy.

Slow Cooker Mushroom Dijon Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1 cup beef au jus
- Steamed white rice, for serving
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the roast, tucking them into the gaps.
- Dollop the sour cream over the top of the roast. Spoon the whole-grain Dijon mustard over the roast as well. Pour the beef au jus along the side of the roast, being careful not to wash off the seasonings.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and shreds easily. The internal temperature of the roast should reach at least 145°F (63°C), but for fall-apart tenderness, cook until it easily pulls apart. Let it rest for 3 minutes before slicing.
- Once the roast is tender, turn off the slow cooker. Let the roast rest in the cooking liquid for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the mushrooms and gravy. Serve hot over steamed white rice, spooning the creamy Dijon-mushroom gravy over the top.
