Tips for success
For the best flavor, sear the roast in a hot skillet with a little oil before adding it to the slow cooker.
This adds a deep, caramelized crust that enhances the final dish. However, the recipe works beautifully without this step, so feel free to skip it on busy days.
If you prefer a thicker jus, remove the roast and mushrooms after cooking, then whisk a slurry of cornstarch and cold water into the liquid.
Simmer on the stovetop until thickened. Alternatively, let the jus reduce by cooking on high with the lid off for 20 minutes.
Variations
- Herb and Garlic: Add 4 cloves of minced garlic and 2 sprigs of fresh rosemary to the slow cooker with the roast. This infuses the meat with aromatic flavor. Use unsalted butter and add a teaspoon of kosher salt to control seasoning.
- Spicy Chipotle: Stir 2 chipotle peppers in adobo sauce into the onion soup mix before sprinkling. This adds a smoky, spicy kick. Serve with pickled onions and a dollop of sour cream to cool the heat.
- Balsamic Glaze: Drizzle 1/4 cup balsamic vinegar over the roast before adding the butter. The vinegar adds tangy sweetness and helps create a deeper, more complex jus. Reduce the onion soup mix to 1/2 packet to balance flavors.
- Mushroom Medley: Replace cremini mushrooms with a mix of shiitake, oyster, and baby bella mushrooms. This adds a more refined, earthy flavor. Slice larger mushrooms so they cook evenly.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to restore saucy consistency.
- Freezer
- Freeze in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating. The texture may change slightly, but flavor holds.
- Reheat
- Reheat on the stovetop over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water if needed to loosen the jus.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently in the microwave or on the stovetop, adding a splash of beef broth if the jus has thickened too much.
This dish is perfect for meal prep. Cook the roast as directed, shred it, and store in the refrigerator.
It can be made up to 2 days ahead and reheated when ready to serve. The jus can be stored separately and added back when reheating to keep the meat moist.
Serving ideas
Serve the shredded roast over creamy mashed potatoes, spooning the buttery jus over the top.
The mushrooms are a delicious addition, and you can also serve with crusty bread or egg noodles. A side of green beans or a simple salad would round out the meal.
For a low-carb option, serve over cauliflower mash or with roasted vegetables. The jus is also excellent over rice or polenta. Garnish with fresh thyme or parsley for a pop of color, if you like.

Slow-Cooker Mushroom Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 1/2 cup salted butter (1 stick)
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Sprinkle the dry onion soup mix evenly over the top of the roast. Scatter the halved cremini mushrooms around the sides of the roast, tucking them into the liquid that will form.
- Place the stick of salted butter directly on top of the seasoned roast. It will melt during cooking, basting the beef and creating a rich, buttery jus.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours. The roast is done when it is fall-apart tender and easily shreds with a fork. The internal temperature should reach at least 145°F (63°C) for medium-rare, but for pot roast, it is typically cooked beyond that for maximum tenderness. Let it rest for 3 minutes before slicing.
- Once the roast is tender, transfer it to a cutting board. Use two forks to shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir gently to coat with the jus.
- Serve the shredded beef and mushrooms over creamy mashed potatoes, spooning the buttery jus over the top. Garnish with fresh parsley if desired.
