Tips for success

For the most flavorful results, use a high-quality salsa that you enjoy eating on its own. The salsa is the backbone of the sauce, so choose one with a good balance of acidity and heat.

If you have time, make your own roasted tomato salsa for an extra-special touch. You can also add a squeeze of fresh lime juice and a handful of chopped cilantro just before serving to brighten the flavors.

This recipe is incredibly versatile. Serve it over rice, quinoa, or cauliflower rice for a low-carb option. Spoon it into warm tortillas and top with avocado, lettuce, and more cheese for tacos.

Or simply enjoy it in a bowl with a dollop of extra sour cream and a sprinkle of green onions. Leftovers make a great filling for burritos or enchiladas.

Variations

  • Spicy Chipotle: Add 1-2 chopped chipotle peppers in adobo sauce to the salsa layer, or use a chipotle salsa. Top with pepper jack cheese instead of Monterey Jack for an extra kick.
  • Green Salsa Version: Swap the red salsa for a tomatillo-based green salsa (salsa verde). Use fire-roasted corn and add a handful of chopped cilantro before serving for a fresh, tangy twist.
  • Add Veggies: Stir in a chopped bell pepper and a small diced onion with the beans and corn. For a heartier meal, add a can of drained diced tomatoes or a cup of frozen peas during the last 30 minutes of cooking.
  • Creamy Ranch Style: Mix 1 packet of ranch seasoning into the sour cream before dolloping it over the chicken. Use a mild salsa and add a cup of frozen corn for a creamy, ranch-flavored version that kids love.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop, adding a splash of broth if needed to loosen the sauce.

You can assemble the uncooked ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.

If starting from cold, you may need to add 30-45 minutes to the cooking time. Alternatively, cook the full dish and freeze leftovers for up to 3 months.

Serving ideas

This hearty dish is satisfying on its own, but it also shines with simple sides. Serve it over steamed white rice or cilantro-lime rice to soak up the creamy sauce.

Warm flour tortillas are perfect for scooping up the chicken and beans. A simple green salad with a lime vinaigrette adds a fresh contrast to the rich, smoky flavors.

For a complete meal, add a side of Mexican street corn or a simple avocado salad. The dish is also excellent in burrito bowls—layer the chicken mixture over rice, then top with lettuce, pico de gallo, and extra cheese. However you serve it, this slow cooker chicken is sure to become a family favorite.

Frequently asked questions

Can this recipe be made with chicken breasts?
Yes, but chicken breasts tend to dry out in the slow cooker. If using breasts, reduce the cooking time to 3-4 hours on LOW and check for doneness early. For the most tender result, stick with thighs, or add the breasts whole and shred them as soon as they reach 165°F (74°C).
Why does the sauce sometimes look curdled?
Curdling can happen if the sour cream is added too early or if the slow cooker runs hotter than average. To avoid this, use full-fat sour cream and stir it in only during the last 30 minutes of cooking. Also, avoid cooking on HIGH if possible, as the higher heat can cause dairy to separate.
Can this dish be frozen?
Absolutely. Let the dish cool completely, then transfer to a freezer-safe container. Freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. The sauce may thin slightly after freezing, so you can simmer it uncovered for a few minutes to thicken.
How can leftovers be used?
Leftovers are incredibly versatile. Use them as a filling for tacos, burritos, or quesadillas. Serve over rice or nachos for a quick meal. You can also stuff them into bell peppers and bake until tender. The flavors deepen overnight, making leftovers even more delicious.
Is it necessary to rinse the black beans?
Rinsing canned beans removes excess sodium and the starchy liquid they're packed in, which can make the sauce cloudy and overly salty. It's a quick step that improves both the flavor and texture of the dish. If using dried beans, be sure to soak and cook them fully before adding.

Slow Cooker Monterey Jack Chicken Thighs with Black Beans and Corn

Slow cooker filled with creamy chicken, black beans, corn, and melted Monterey Jack cheese

Ingredients

  • 6 boneless skinless chicken thighs
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fire-roasted corn kernels
  • 1 1/2 cups chunky roasted red tomato salsa
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Monterey Jack cheese

Instructions

  1. Place the chicken thighs in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the rinsed black beans and fire-roasted corn over the chicken. Pour the salsa over the top, spreading it to cover the ingredients as evenly as possible.
  2. Dollop the sour cream over the top of the mixture, then sprinkle the shredded Monterey Jack cheese evenly over everything. Do not stir; the cheese and sour cream will melt into the sauce as it cooks.
  3. Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and easily shreds with a fork. The internal temperature of the chicken should reach at least 165°F (74°C).
  4. Once the chicken is cooked through, use two forks to shred the thighs into bite-size pieces right in the slow cooker. Stir everything gently to combine the shredded chicken with the beans, corn, and creamy sauce.
  5. Spoon the hot chicken mixture over warm flour tortillas or into bowls. Serve immediately, with extra salsa or cheese if desired.
