Before you start

Before you start, make sure your slow cooker is clean and ready. Rinse the black beans in a colander under cold water and let them drain well. Measure out the corn, salsa, sour cream, and shredded cheese.

If your chicken thighs are large, you can leave them whole or cut them into smaller pieces—whatever you prefer. No need to season the chicken; the salsa and cheese provide plenty of flavor.

Ingredients at a glance (6)
  • 6 boneless skinless chicken thighs
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fire-roasted corn kernels
  • 1 1/2 cups chunky roasted red tomato salsa
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Monterey Jack cheese

Instructions

Layer and Top

  1. Layer the Ingredients
Place the chicken thighs in an even layer in the bottom of a 6-quart slow cooker. Sprinkle the rinsed black beans and fire-roasted corn over the chicken. Pour the salsa over the top, spreading it to cover the ingredients as evenly as possible.
Look for The chicken should be mostly covered by the beans, corn, and salsa.
Tip Rinse the canned beans in a colander under cold water to remove excess sodium.
  2. Add Dairy Toppings
Dollop the sour cream over the top of the mixture, then sprinkle the shredded Monterey Jack cheese evenly over everything. Do not stir; the cheese and sour cream will melt into the sauce as it cooks.
Look for The top should be covered with cheese and sour cream dollops.
Tip For a smoother sauce, use full-fat sour cream; it won't curdle as easily.

At the end of this phase, you'll have a neat layer of chicken at the bottom, topped with beans, corn, salsa, sour cream, and cheese.

The colors should be vibrant: the deep red of the salsa, the white of the sour cream, and the golden of the cheese. It's okay if the layers aren't perfectly even—they'll meld during cooking.

Slow Cook and Shred

  1. Cover and Cook
Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and easily shreds with a fork. The internal temperature of the chicken should reach at least 165°F (74°C).
Look for The sauce will be bubbling gently around the edges, and the cheese will be melted.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to lift the lid during cooking; each peek adds cooking time.
  2. Shred the Chicken
Once the chicken is cooked through, use two forks to shred the thighs into bite-size pieces right in the slow cooker. Stir everything gently to combine the shredded chicken with the beans, corn, and creamy sauce.
Look for The chicken should pull apart easily and be coated in the sauce.
Tip Remove the chicken to a cutting board if easier, shred, then return to the pot.

After cooking, the sauce should be bubbling gently, and the cheese melted into a creamy blanket over the top. The chicken should be tender enough to shred easily with a fork. The aroma is irresistible—smoky, tangy, and cheesy. Before shredding, check that the chicken reaches 165°F (74°C).

Serve and Savor

  1. Serve and Enjoy
Spoon the hot chicken mixture over warm flour tortillas or into bowls. Serve immediately, with extra salsa or cheese if desired.
Look for The dish should be hot, creamy, and fragrant.
Tip Warm the tortillas in a dry skillet for a few seconds per side for softness.

The final dish is a hearty, saucy mixture with tender shreds of chicken, whole black beans, and sweet corn kernels, all coated in a creamy, cheesy salsa sauce. It should be piping hot, with a rich, smoky smell. Serve it immediately over rice, in tortillas, or on its own.

Common mistakes

One common mistake is lifting the lid too often to check on the food. Every time you lift the lid, heat escapes and adds to the cooking time. Trust the recipe and let it cook undisturbed.

Another mistake is using chicken breasts instead of thighs—breasts can dry out in the slow cooker. Stick with thighs for the most tender results. Finally, don't skip rinsing the beans; the extra sodium in canned beans can make the dish overly salty.

How to tell it’s done

The dish is done when the chicken is tender enough to shred easily with a fork and has reached an internal temperature of 165°F (74°C). The sauce should be bubbly and slightly thickened, with the cheese fully melted and incorporated.

If the sauce seems too thin, let it cook uncovered for an additional 15-20 minutes to reduce. If it's too thick, stir in a splash of chicken broth or water.

  • Poultry: 165°F (74°C) in the thickest part
