Tips for success

To add a bit of texture to your sliders, consider toasting the slider buns lightly before assembling. A quick buttered toast in a skillet or under the broiler adds a slight crunch that contrasts beautifully with the tender, juicy shredded pork. This small step elevates the overall experience of the sandwich.

If you find the sauce is too thin after shredding the pork, you can remove the meat and boil the remaining juices in a small saucepan over medium-high heat until it reduces to your desired consistency.

This concentrates the mojo flavor even further, allowing you to drizzle extra sauce over the sliders just before serving.

Variations

  • Spicy Mojo Pork: Add one finely minced habanero or jalapeño pepper to the citrus marinade before pouring it over the pork. This introduces a subtle, building heat that complements the acidity of the lime and the sweetness of the orange juice.
  • Herb-Infused Mojo: Incorporate fresh cilantro or parsley into the shredded pork just before serving. The addition of fresh, leafy herbs adds a vibrant color and a bright, herbaceous note that cuts through the richness of the pork shoulder.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Store in a freezer-safe bag or container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium heat, adding a splash of water or orange juice if needed to keep the meat moist, until the internal temperature reaches 165°F.

Allow any leftover shredded pork to cool completely at room temperature for no more than two hours. Once cooled, transfer the pork and its juices into an airtight container.

Properly sealed, the leftovers will maintain their quality in the refrigerator for up to three days, making them an excellent option for quick lunches or dinners later in the week.

This dish is perfect for making ahead, as the flavors often deepen after sitting in the refrigerator overnight. You can cook the pork completely, shred it, and store it in its juices.

When you are ready to serve, simply reheat the mixture on the stovetop or in the microwave until it is heated through, then assemble your sliders fresh.

Serving ideas

Serve these sliders warm, directly after tossing the shredded pork in the pan juices. The combination of the soft, citrus-infused meat and the slightly toasted bun is the highlight of this dish.

You can offer additional toppings on the side, such as thinly sliced radishes for crunch or a light cabbage slaw to add a fresh, crisp element.

For a complete meal, pair these sliders with simple sides that do not compete with the bold mojo flavors. A side of black beans and rice or a crisp green salad with a light vinaigrette works exceptionally well. Keeping the sides simple allows the citrus-garlic profile of the pork to remain the star of the plate.

Frequently asked questions

Can this recipe be made with other cuts of meat?
While pork shoulder is the traditional choice due to its fat content and tenderness when slow-cooked, you could use a pork loin, though it will be leaner and may require a shorter cooking time to prevent it from becoming dry. Stick to shoulder for the most authentic and tender result.
Why is the pork tough after cooking?
If the pork is tough, it likely needs more time in the slow cooker to break down the connective tissues. Ensure you are using a slow cooker that maintains a consistent temperature and that you are cooking the meat until it reaches the proper internal temperature and pulls apart easily with a fork.
Is it necessary to sear the pork first?
Searing the pork before placing it in the slow cooker can add an extra layer of flavor through the Maillard reaction, but it is not strictly necessary for this recipe. The citrus marinade and long, slow cooking process will still produce a delicious and highly flavorful result without the extra step of searing.

Ingredients

  • 4 lb boneless pork shoulder, cut into large chunks
  • 1 large white onion, thinly sliced
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 cup citrus juice blend (orange and lime)
  • 4 cloves garlic, minced
  • 16 slider buns, for serving

Instructions

  1. Place the chunks of pork shoulder into the base of the slow cooker. Layer the thinly sliced white onions evenly over the top of the pork. Sprinkle the ground cumin and dried oregano over the onion layer to distribute the spices evenly.
  2. Whisk together the orange juice, lime juice, and minced garlic in a measuring cup. Pour the mixture over the pork and onions in the slow cooker. Cover and cook on low for 7 to 8 hours or on high for 4 hours until the pork reaches an internal temperature of 145°F (63°C). Let the meat rest for at least 3 minutes before shredding.
  3. Remove the pork from the slow cooker and place it on a clean cutting board. Use two forks to shred the meat into bite-sized pieces, discarding any excess fat if desired. Return the shredded pork to the juices in the slow cooker to moisten, then serve on slider buns.
