Tips for success

To add a touch of freshness, you can sprinkle the finished dish with a small amount of chopped fresh chives or parsley just before serving. This provides a bright contrast to the richness of the melted cheese and the smokiness of the sausage. For those who enjoy extra texture, serving the dish with a side of crusty baguette slices is highly recommended, as they are perfect for scooping up the remaining cheese from the bottom of the box.

If you find that your cheese is melting faster than the potatoes are cooking, you can wrap the cheese box loosely with a piece of parchment paper to protect it from the direct heat of the slow cooker walls.

Additionally, ensure that the potatoes are submerged or at least in contact with the liquid at the bottom of the slow cooker to encourage even cooking. Monitoring the progress towards the end of the cooking time will help you achieve the perfect balance between the tender potatoes and the molten cheese.

Variations

  • Herb-Infused Version: Add a sprig of fresh rosemary or thyme to the slow cooker along with the garlic for an earthy, aromatic depth that complements the creamy Mont d'Or perfectly.
  • Spicy Sausage Variation: Substitute the Morteau sausage with a spicy chouriço or a pepper-infused sausage to introduce a subtle heat that cuts through the richness of the melted cheese.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Reheat
Reheat gently in the microwave or a low-temperature oven until the cheese is melted and the sausage is warmed through.

If you have any leftovers, allow the dish to cool for no more than two hours before transferring it to airtight containers. The cheese and potatoes can be stored together, but it is best to slice any remaining sausage separately to maintain its texture.

Place the containers in the refrigerator, where they will keep for up to three days. When storing, ensure the cheese is fully covered to prevent it from absorbing other flavors from the refrigerator environment.

You can prepare the slow cooker base by placing all the ingredients into the ceramic insert ahead of time. Cover the insert tightly and refrigerate it for up to 24 hours before cooking. When you are ready to eat, simply place the insert back into the slow cooker base and start the cooking cycle. This makes it a convenient option for hosting, as you can assemble everything in advance and have the dish ready to serve with minimal effort.

Serving ideas

Serve this dish immediately while the cheese is hot and molten. Place the entire slow cooker insert on a heat-safe trivet in the center of the table, or carefully transfer the cheese box and ingredients to a large, pre-warmed platter.

Provide guests with small plates and forks, and encourage them to dip the potatoes and sausage directly into the cheese. It is a communal and interactive way to enjoy a meal that emphasizes the pleasure of shared, warm, and comforting flavors.

Pair this dish with a crisp green salad tossed in a sharp vinaigrette to balance the richness of the cheese and sausage. A glass of the same dry white wine used in the recipe makes an excellent accompaniment, as the acidity will cleanse the palate between bites.

Ensure that there is plenty of crusty bread available to help finish the meal, as the combination of melted cheese and wine-infused potatoes is sure to leave everyone wanting to enjoy every last drop of the decadent sauce.

Frequently asked questions

Can this dish be made in a traditional oven?
Yes, it can be prepared in the oven. Place the cheese box in a small baking dish, surround it with the potatoes and sausage, and bake at 350°F (175°C) for about 45 minutes, or until the cheese is molten and the potatoes are fork-tender.
What is the best way to prevent the cheese from becoming too liquid?
The key is to keep the cheese in its original wooden box, which provides structural support. Additionally, avoid adding too much extra liquid beyond the specified amount of wine, as this can dilute the cheese and affect its final texture.
Is it possible to use a different type of cheese?
While Mont d'Or is ideal due to its specific melting properties, you can use other washed-rind cheeses that are designed to be melted. Look for cheeses labeled as suitable for baking or melting to ensure the best results.
