Tips for success

For the best flavor, use a good-quality teriyaki glaze. Look for one with a balanced sweetness and saltiness, not too thin.

If you want a thicker glaze, mix 1 teaspoon of cornstarch with 1 tablespoon of water and stir it into the sauce during the last 30 minutes of cooking. This will give it a beautiful, glossy sheen.

Don't be afraid to adjust the amount of mango or pepper to your liking. The mango is the star here, so if you love it, add extra. You can also toss in some sliced green onions or a sprinkle of red pepper flakes before serving for a fresh, spicy contrast.

Variations

  • Spicy Mango Teriyaki: Add 1-2 teaspoons of sriracha or a minced fresh chili to the teriyaki glaze before pouring over the chicken. The heat balances the sweetness of the mango and adds a pleasant kick.
  • Pineapple Teriyaki Chicken: Swap the mango for pineapple chunks. The pineapple's acidity cuts through the rich glaze, and it holds its shape even after long cooking. Use fresh or canned (drained) pineapple.
  • Vegetable Boost: Add sliced onions, zucchini, or snow peas along with the red bell pepper. They will soften and absorb the teriyaki glaze, making the dish more substantial and colorful.
  • Sesame-Ginger Twist: Stir in 1 tablespoon of freshly grated ginger and 2 cloves of minced garlic with the teriyaki glaze. The extra aromatics make the dish more fragrant and complex.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently in a saucepan over medium-low heat, adding a splash of water or extra teriyaki glaze to loosen the sauce.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will continue to meld, making it even more delicious the next day.

When reheating, add a splash of water or extra teriyaki glaze to keep the sauce from drying out.

You can prep the ingredients the night before: cut the mango and pepper, and place them in a zip-top bag in the refrigerator. The chicken can also be seasoned and kept in the fridge.

In the morning, simply layer everything in the slow cooker and start it. This makes it a true dump-and-go meal for busy days.

Serving ideas

Serve the chicken and mango over steamed jasmine rice or cauliflower rice for a lighter option.

The glossy sauce is perfect for soaking into the rice, so don't be shy with it. A side of steamed broccoli or a crisp green salad rounds out the meal beautifully.

For a fun twist, use the chicken to fill tacos or lettuce wraps. Shred the meat and pile it into warm tortillas with extra mango and a drizzle of the glaze. It's a fresh, unexpected way to enjoy the same delicious flavors.

Frequently asked questions

Can this recipe be made with chicken breasts instead of drumsticks?
Yes, boneless, skinless chicken breasts can be used, but they will cook faster and can dry out. Reduce the cooking time to 2-3 hours on LOW, and check for doneness at 165°F (74°C). You may also want to add a little extra teriyaki glaze to keep them moist.
What if the sauce is too thin?
If the sauce is thinner than you'd like after cooking, remove the chicken and vegetables, then pour the sauce into a small saucepan. Simmer over medium heat for 5-10 minutes, or until it reduces and thickens. Alternatively, whisk in a slurry of 1 teaspoon cornstarch and 1 tablespoon water, and simmer until thickened.
Can this be made ahead of time?
Absolutely. Cook the chicken as directed, then let it cool completely before storing in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave. The flavors only get better as they meld.
Is it necessary to sear the chicken first?
No, searing is not required for this recipe. The slow cooker will produce tender, flavorful chicken without browning. However, if you prefer a deeper flavor, you can sear the drumsticks in a hot skillet for 2-3 minutes per side before adding them to the slow cooker.
Can you use frozen mango?
Yes, frozen mango cubes work well. Thaw them in the refrigerator or at room temperature, and drain off any excess liquid before adding them to the slow cooker. This prevents the sauce from becoming too watery.
