Tips for success

For the best flavor, use a good-quality habanero lime salsa that you enjoy eating on its own. The salsa is a key flavor component, so its quality matters.

If you can't find habanero lime salsa, substitute any fruity salsa or add a tablespoon of lime juice and a minced habanero to regular salsa.

To make the dish even more substantial, serve it over rice or with beans on the side. The sauce is also excellent as a topping for nachos or tacos.

If you prefer a spicier dish, add extra minced habanero or a dash of hot sauce before serving. For a milder version, use a mild salsa and omit the extra heat.

Variations

  • Chicken Breast Version: Substitute boneless, skinless chicken breasts for thighs. Cook on low for 2-3 hours, or until the breasts reach 165°F (74°C). Shred and return to the sauce. Be careful not to overcook, as breasts can dry out.
  • Extra Spicy: Add 1-2 minced habanero peppers or 1 teaspoon of habanero hot sauce to the salsa mixture. Increase the amount of cilantro for freshness. Serve with cooling toppings like avocado or extra sour cream.
  • Pineapple Mango: Replace half of the mango with diced pineapple. The pineapple adds extra sweetness and a tropical twist. Use a mild salsa to balance the sweetness, and consider adding a squeeze of lime juice before serving.
  • Taco Filling: Shred the chicken and serve in hard or soft taco shells with shredded lettuce, diced tomatoes, and a drizzle of lime crema. The filling is also great in burritos or as a topping for tostadas.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the dish tastes even better the next day. Reheat gently in the microwave or on the stovetop until warmed through.

You can assemble the uncooked ingredients in the slow cooker insert and refrigerate overnight. In the morning, place the insert into the slow cooker and cook as directed, adding about 30 minutes to the cooking time if starting from cold.

Serving ideas

Serve the chicken thighs with warm flour tortillas, allowing everyone to make their own tacos or burritos.

The creamy, spicy sauce is perfect for scooping with tortilla chips or spooning over rice. A side of black beans or a simple green salad would round out the meal nicely.

For a low-carb option, serve the chicken over cauliflower rice or with a side of roasted vegetables.

The dish is also delicious as a filling for quesadillas or as a topping for nachos. Add a dollop of extra sour cream and a sprinkle of fresh cilantro for a bright finish.

Frequently asked questions

Can this recipe be made in a pressure cooker?
Yes, this recipe can be adapted for a pressure cooker. Sear the chicken in the pot on sauté mode, then add the remaining ingredients and cook on high pressure for 15 minutes. Quick release the pressure, shred the chicken, and serve. The sauce may be thinner, so simmer on sauté mode for a few minutes to thicken.
How can the spice level be adjusted?
To make the dish milder, use a mild salsa and omit any extra hot sauce. For more heat, add minced habanero peppers or a teaspoon of habanero hot sauce. The sour cream and cheese help tame the heat, so you can also increase those amounts.
Can this dish be served over rice?
Absolutely. The creamy, spicy sauce is excellent over white rice, cilantro-lime rice, or cauliflower rice. The rice soaks up the sauce and makes the meal even more satisfying. Just spoon the chicken and sauce over a bed of rice and serve.
How do you store and reheat leftovers?
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop over medium heat, stirring occasionally. If the sauce has thickened, add a splash of water or chicken broth to loosen it.
Can this recipe be doubled?
Yes, you can double the ingredients as long as they fit in your slow cooker. Use a larger slow cooker (at least 7 quarts) and increase the cooking time by about 30 minutes. Check the chicken for doneness before serving.
