Before you start
Before you start, dice the mango into 1/2-inch pieces and chop the cilantro. Shred the Monterey Jack cheese if not pre-shredded. Measure the salsa and sour cream.
Place the chicken thighs in the slow cooker as the first layer. There is no need to brown the chicken first—the slow cooker will create plenty of flavor. Ensure the slow cooker is clean and dry before adding the ingredients.
Ingredients at a glance (6)
- 6 boneless skinless chicken thighs
- 2 cups diced ripe mango
- 1 cup habanero lime salsa
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- 2 cups shredded Monterey Jack cheese
Instructions
Layer and Top
- Layer the Chicken and ToppingsPlace the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Scatter the diced mango, habanero lime salsa, and chopped cilantro evenly over the chicken.Look for The chicken is covered with colorful mango, salsa, and cilantro.Tip No need to stir—layering keeps the chicken moist.
- Add the Creamy ToppingsDollop the sour cream over the top, then sprinkle with the shredded Monterey Jack cheese. Do not stir.Look for The top is covered with white and golden dollops.Tip The cheese melts into the sauce as it cooks.
After layering the chicken, mango, salsa, cilantro, sour cream, and cheese, the slow cooker will be filled with colorful ingredients. The cheese and sour cream sit on top, not yet melted. This is the 'dump and go' stage—everything is ready to cook without stirring.
Slow Cook and Shred
- Slow Cook Until TenderCover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).Look for The sauce is bubbling and the chicken shreds easily.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Low and slow gives the most tender result.
- Shred the ChickenUsing two forks, shred the chicken thighs directly in the slow cooker. Stir to coat with the mango habanero sauce.Look for The chicken pulls apart easily and is coated in sauce.Tip Shred while warm for the best texture.
After 4-5 hours on low, the kitchen smells sweet and spicy. The sauce is bubbling around the edges, and the chicken is tender enough to shred with a fork.
The cheese has melted into the sauce, creating a creamy, golden mixture. The chicken shreds easily and absorbs the sauce.
Serve
- Serve with TortillasServe the chicken mixture warm with flour tortillas on the side.Look for The dish is ready to plate.Tip Warm the tortillas before serving.
The finished dish is a thick, creamy, saucy mixture with visible pieces of mango and cilantro. The chicken is shredded and coated in the sauce. Serve it hot with warm tortillas, and the sauce is rich enough to spoon over each bite.
Common mistakes
Avoid opening the lid frequently during cooking, as this releases heat and extends the cooking time. Do not stir the ingredients before cooking—layering helps the chicken stay moist and allows the flavors to develop.
If using chicken breasts instead of thighs, reduce the cook time to prevent them from drying out. Also, be careful when shredding the chicken—it will be very hot.
How to tell it’s done
The chicken is done when it is fork-tender and easily shreds, and the internal temperature reaches 165°F (74°C) on an instant-read thermometer.
The sauce will be bubbling and slightly thickened, and the cheese will be fully melted and incorporated. If the sauce seems thin, continue cooking uncovered on high for 15-20 minutes to reduce it slightly.
- Poultry: 165°F (74°C) in the thickest part
