Tips for success
For the best texture, don't stir the chicken too much after it's cooked. Use a gentle hand to keep the pieces intact, or leave them whole and let diners shred their own.
The sauce will thicken as it sits, so if it becomes too thick, add a splash of chicken broth or water to loosen it. For extra char on the cheese, transfer the slow cooker insert to the oven under the broiler for 2 to 3 minutes, watching carefully to avoid burning.
To make this a complete meal, serve over Spanish rice or warm tortillas. The dish also works well as a filling for tacos or burritos—just spoon the chicken into warm tortillas and top with extra cilantro and a squeeze of lime.
For a low-carb option, serve over cauliflower rice or a bed of shredded lettuce. The leftovers are excellent in quesadillas or as a topping for nachos.
Variations
- Pineapple Habanero: Swap the mango for diced pineapple for a tangier sweet-heat. Use the same amount, and add a tablespoon of lime juice to brighten the sauce.
- Mild Mango Salsa: For a family-friendly version, use a mild mango salsa instead of habanero. Add a pinch of cayenne or a minced jalapeño to the slow cooker for a gentle kick.
- Chicken Breast Option: Use boneless, skinless chicken breasts instead of thighs, but reduce cooking time to 3 to 4 hours on low. Check for doneness at 3 hours to avoid dry meat.
- Black Bean and Corn Addition: Stir in a drained can of black beans and a cup of frozen corn during the last 30 minutes of cooking for a more substantial meal.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the dish even more delicious the next day. Reheat gently in the microwave or on the stovetop, adding a splash of water or chicken broth to loosen the sauce if needed.
This recipe is perfect for meal prep. Assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.
You can also cook the full recipe, let it cool, and store in the refrigerator or freezer for later. Reheat gently to preserve the texture.
Serving ideas
Spoon the chicken and sauce over a bed of steamed Spanish rice, letting the sauce soak into the grains. Garnish with extra cilantro and a wedge of lime for brightness. The dish is hearty enough to stand alone, but a simple green salad with avocado and lime vinaigrette makes a fresh side.
For a more casual presentation, serve the chicken in warm corn or flour tortillas with shredded cabbage, pickled onions, and a dollop of sour cream.
The sweet-heat of the mango habanero pairs beautifully with cool, creamy toppings. Leftovers can be transformed into nachos, quesadillas, or a hearty breakfast scramble.

Slow-Cooker Mango Habanero Chicken Thighs with Oaxaca Cheese

Ingredients
- 6 boneless skinless chicken thighs
- 2 cups diced ripe mango
- 1 1/2 cups habanero lime salsa
- 1/2 cup chopped fresh cilantro
- 8 oz shredded Oaxaca cheese
- 8 oz shredded Mexican four-cheese blend
Instructions
- Place the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Spread them evenly so the meat is in direct contact with the bottom of the pot.
- Scatter the diced mango over the chicken, then pour the habanero lime salsa evenly over the top. Sprinkle the chopped cilantro over the salsa, making sure the fruit and sauce are distributed across the meat.
- Sprinkle the shredded Oaxaca cheese and the Mexican four-cheese blend evenly over the top of the chicken and salsa mixture. Cover the slow cooker with the lid.
- Set the slow cooker to low and cook for 4 to 5 hours, or until the chicken is fork-tender and registers 165°F (74°C) in the thickest part. Do not lift the lid during the first 3 hours to keep the heat steady.
- After 4 hours, check the chicken for doneness. Use two forks to gently pull the thighs apart; they should shred easily. Stir the sauce and melted cheese together, being careful not to break the chicken into tiny pieces.
- Spoon the chicken and sauce over steamed Spanish rice on a white plate. Use a serving spoon to lift a generous scoop of the chicken and cheese mixture, letting the extra sauce drizzle over the top.
