Tips for success
For a deeper flavor profile, consider trussing the chicken with kitchen twine before placing it in the slow cooker. This helps the chicken maintain a compact shape, which promotes more even cooking and makes it easier to handle when removing it from the cooker once it is fully cooked and tender.
If you prefer a slightly more golden appearance to the skin, you can transfer the cooked chicken to a baking sheet and broil it in the oven for 3 to 5 minutes after it has finished in the slow cooker.
Watch it closely to prevent the skin from burning, as it will be very delicate after the slow cooking process.
Variations
- Mediterranean Style: Add pitted Kalamata olives, artichoke hearts, and sun-dried tomatoes to the slow cooker along with the lemon and onions for a Mediterranean-inspired flavor profile that pairs beautifully with the thyme.
- Root Vegetable Bed: Layer thick slices of carrots, potatoes, and parsnips at the bottom of the slow cooker before adding the chicken. The vegetables will cook in the chicken juices, resulting in a complete one-pot meal.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 4 days.
- Freezer
- Shred the cooked chicken and store it in a freezer-safe bag for up to 3 months.
- Reheat
- Warm gently in a saucepan over low heat with a splash of broth until heated through.
Allow any leftover chicken to cool to room temperature for no more than two hours before transferring it to an airtight container. Keep the chicken shredded or in pieces to help it cool faster.
Store it in the refrigerator promptly to maintain quality and safety, and ensure it is consumed within three to four days for the best taste.
This dish is excellent for meal planning. You can assemble the ingredients in the slow cooker insert the night before, cover it, and keep it in the refrigerator.
In the morning, simply place the insert into the slow cooker base and start the cooking process. This saves time on busy mornings and ensures dinner is ready when you return home.
Serving ideas
Serve this chicken alongside roasted root vegetables or a fresh garden salad to complement the savory notes of the thyme and lemon. The flavorful juices remaining in the slow cooker can be strained and served as a light au jus or thickened with a little flour or cornstarch to create a simple, delicious gravy.
For a casual family meal, shred the leftover chicken to use in sandwiches, wraps, or salads the following day.
The combination of lemon and thyme makes it incredibly versatile, and the moisture retained from the slow cooking process ensures that even reheated leftovers remain tender and delicious for a variety of quick lunch options throughout the week.

Slow Cooker Lemon Thyme Whole Chicken

Ingredients
- 1 whole chicken, about 4 pounds
- 2 whole lemons, halved
- 1 medium onion, cut into wedges
- 1 tbsp dried thyme
- 1 tsp garlic powder
- 1 cup chicken broth
Instructions
- Place the whole chicken into the base of the slow cooker, breast side up. Tuck the lemon halves and onion wedges around the sides of the chicken to ensure even distribution of aromatics throughout the cooking process.
- Sprinkle the dried thyme and garlic powder evenly over the top of the chicken. Carefully pour the chicken broth into the bottom of the slow cooker around the chicken, being careful not to wash away the herbs from the top of the bird.
- Cover the slow cooker and cook on low for 6 hours or on high for 3 to 4 hours. Once the cooking time is complete, verify that the thickest part of the breast reaches an internal temperature of 165°F (74°C). Remove the chicken carefully and let it rest for at least 10 minutes before carving.
