Before you start

Before starting, ensure your slow cooker insert is clean and dry. Remove any giblets from the cavity of the chicken and pat the bird dry with paper towels.

Prepare your aromatics by halving the lemons and cutting the onion into wedges. Having all your ingredients measured and ready to go before you begin assembling the dish will make the process seamless and efficient.

Ingredients at a glance (6)
  • 1 whole chicken, about 4 pounds
  • 2 whole lemons, halved
  • 1 medium onion, cut into wedges
  • 1 tbsp dried thyme
  • 1 tsp garlic powder
  • 1 cup chicken broth

Instructions

Assembly phase

  1. Prepare the slow cooker
Place the whole chicken into the base of the slow cooker, breast side up. Tuck the lemon halves and onion wedges around the sides of the chicken to ensure even distribution of aromatics throughout the cooking process.
Look for The chicken should sit securely in the bottom of the slow cooker insert without crowding.
Tip Ensure the chicken is patted dry with paper towels before placing it in the cooker for better flavor absorption.

At this stage, the chicken is nestled securely in the slow cooker with the lemon and onion tucked tightly around it. The aromatics are positioned to release their flavors into the chicken as it heats, and the ingredients are arranged to maximize contact and ensure that the chicken is ready to receive the seasonings and liquid for the upcoming slow cooking process.

Seasoning phase

  1. Season and add liquid
Sprinkle the dried thyme and garlic powder evenly over the top of the chicken. Carefully pour the chicken broth into the bottom of the slow cooker around the chicken, being careful not to wash away the herbs from the top of the bird.
Look for The broth should pool at the base of the chicken, creating a flavorful steaming liquid.
Tip Mix the dry seasonings in a small bowl before sprinkling to ensure they are well combined.

Once the thyme, garlic powder, and broth are added, the slow cooker is ready for the long, slow heat. You should see the broth pooling at the bottom, which will provide the necessary steam to keep the chicken moist. Everything is now positioned correctly to begin the gentle transformation into a tender, flavorful meal that requires no further intervention.

Cooking and resting phase

  1. Cook and serve
Cover the slow cooker and cook on low for 6 hours or on high for 3 to 4 hours. Once the cooking time is complete, verify that the thickest part of the breast reaches an internal temperature of 165°F (74°C). Remove the chicken carefully and let it rest for at least 10 minutes before carving.
Look for The skin will appear soft and pale, and the juices should run clear when pierced with a knife.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Save the remaining juices in the slow cooker to drizzle over the carved chicken for extra moisture.

The chicken is now fully cooked, with the meat appearing soft and tender. The liquid at the bottom has transformed into a savory, thyme-infused broth.

After verifying the internal temperature of 165°F (74°C), the chicken is removed to rest. This final resting phase is essential to allow the internal juices to settle, resulting in a perfectly succulent bird for serving.

Common mistakes

A common mistake is lifting the lid frequently during the cooking process. Each time the lid is opened, heat escapes, which significantly increases the total cooking time and disrupts the steady temperature required for even cooking.

Additionally, ensure the chicken is placed breast-side up to allow the juices to collect in the darker meat parts, and avoid overloading the cooker with too many vegetables, which can release excess liquid and dilute the flavor of the dish.

How to tell it’s done

The chicken is perfectly cooked when the juices run clear and an instant-read meat thermometer inserted into the thickest part of the breast, without touching bone, registers at least 165°F (74°C).

The meat should be tender and easily pull away from the bone when finished. Always allow the chicken to rest for at least 10 minutes before carving to ensure the juices redistribute throughout the meat, maintaining maximum tenderness.

  • Poultry: 165°F (74°C) in the thickest part
