Tips for success

For the best texture, serve the cake warm, but not piping hot. Let it rest for 5 minutes after cooking so the sauce thickens slightly and the cake sets a bit more. Use a wide spoon to get both cake and sauce in each serving. If you want a more intense lemon flavor, add an extra tablespoon of lemon zest to the batter or a teaspoon of lemon extract.

The slow cooker's heat can vary, so check the cake at 1 hour 45 minutes if your cooker runs hot. If the top is browning too quickly but the center is not set, you can turn the cooker to LOW for the last 15 minutes.

To make this dessert gluten-free, use a 1:1 gluten-free flour blend; the texture will be slightly more delicate but still delicious.

Variations

  • Orange Curd Version: Replace the lemon curd with orange curd and use orange zest instead of lemon zest. Add a tablespoon of orange liqueur to the cream mixture for an adult twist. The flavor will be sweeter and less tart, but just as bright.
  • Berry Swirl: After layering the curd, spoon 1/2 cup of raspberry jam or fresh berry compote over the top. Use a knife to gently swirl it into the batter. The berries will create ribbons of color and flavor throughout the cake.
  • Gluten-Free Adaptation: Substitute the all-purpose flour with a 1:1 gluten-free baking flour blend. The cake will be slightly more delicate, so handle it gently when spooning. Ensure the blend contains xanthan gum for structure.
  • Dairy-Free Option: Use a plant-based butter and coconut cream instead of heavy cream. Choose a dairy-free lemon curd or make one with coconut milk. The texture will be slightly different but still creamy and delicious.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
Freezer
Freeze the cooled cake and sauce in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat gently.
Reheat
Reheat individual portions in the microwave for 30-45 seconds or in a saucepan over low heat until warm.

Store leftover cake and sauce together in an airtight container in the refrigerator for up to 3 days. The cake will absorb some of the sauce, becoming more pudding-like, which is still delicious. Reheat gently in the microwave or in a small saucepan over low heat until warmed through. If the sauce seems too thick, stir in a splash of milk or cream.

The batter can be prepared up to 1 day ahead and kept covered in the refrigerator. When ready to cook, let it sit at room temperature for 30 minutes, then proceed with layering and slow-cooking.

The lemon curd can also be made ahead and stored in the refrigerator for up to a week. The fully cooked cake can be made a day ahead and reheated gently, but the texture is best when fresh.

Serving ideas

Serve the cake warm in glass bowls or shallow dishes so the lemon sauce can pool around the sponge. Dust generously with powdered sugar right before serving to create a snowy contrast.

Fresh berries, such as raspberries or blueberries, add a pop of color and a slight tartness that complements the sweet lemon. A dollop of lightly sweetened whipped cream would also be lovely, though not in the video.

This dessert is wonderful on its own, but it also pairs well with a scoop of vanilla ice cream or a spoonful of crème fraîche. For a brunch spread, serve it alongside coffee or tea.

The cake is best enjoyed immediately, but leftovers can be reheated for a comforting treat the next day. The bright lemon flavor makes it a year-round favorite, especially in spring and summer.

Frequently asked questions

Can this cake be made in a regular oven?
Yes, you can bake it in a 350°F (175°C) oven for about 30-35 minutes in a buttered baking dish. The texture will be more like a traditional pudding cake, but still delicious. Adjust the cooking time as needed and check for doneness with a thermometer.
Why is the cake not rising in the slow cooker?
The most common reason is opening the lid too often, which releases steam and lowers the temperature. Also, make sure the egg whites are whipped to stiff peaks and folded gently into the batter. Overmixing can deflate the whites, preventing the cake from rising.
Can the lemon curd be made from scratch?
Absolutely. Homemade lemon curd works beautifully in this recipe. Use a thick recipe that holds its shape when spooned. If making it ahead, store it in the refrigerator and bring to room temperature before using.
How can the cake be reheated without drying out?
Reheat individual portions in the microwave for 30-45 seconds, or place the cake and sauce in a saucepan with a splash of cream or milk and warm over low heat, stirring gently. Avoid high heat, which can make the eggs rubbery.
Can this dessert be served cold?
It can be served cold, but the texture is best when warm. Chilled, the sauce thickens and the cake becomes denser. If you prefer a cold dessert, let it chill in the refrigerator for at least 2 hours and serve with a dollop of whipped cream.

Slow-Cooker Lemon Curd Molten Butter Cake

Prep 20 minCook 2 hTotal 2 h 20 minServes 8
A warm, golden lemon butter cake in a yellow slow cooker with a pool of lemon curd sauce.

Ingredients

  • 1 cup thick lemon curd, homemade or store-bought
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3 large eggs, separated
  • 1 tbsp Meyer lemon zest
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1/2 cup heavy cream
  • 2 tbsp granulated sugar
  • Powdered sugar, for dusting, to taste
  • Fresh berries, for serving

Instructions

  1. In a large bowl, beat the softened butter and 3/4 cup sugar until light and fluffy. Add the egg yolks one at a time, beating well after each. Stir in the Meyer lemon zest. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  2. In a clean bowl, beat the egg whites with an electric mixer on medium-high speed until stiff peaks form. The whites should look glossy and hold a firm peak when the beaters are lifted.
  3. Gently fold the whipped egg whites into the lemon batter in three additions. Use a rubber spatula to cut down through the center and sweep up the sides, turning the bowl as you go. Fold just until no white streaks remain; the batter should be light and airy.
  4. Spoon the batter into the slow cooker and spread it into an even layer. Spoon the 1 cup of lemon curd across the center of the batter, leaving a border around the edges. The curd will sink and spread as it cooks.
  5. In a small bowl, stir together the heavy cream and 2 tablespoons of sugar until the sugar dissolves. Pour this mixture gently over the batter and curd, trying not to disturb the layers.
  6. Cover the slow cooker and cook on HIGH for 2 hours, until the top is golden and the edges are set. The center should look slightly glossy but not wet. The lemon curd and cream will form a bubbling sauce underneath the sponge.
  7. To ensure the eggs are fully cooked, insert an instant-read thermometer into the center of the cake. It should read at least 160°F (71°C). If it hasn't reached that temperature, cook for another 10 to 15 minutes and check again.
  8. Spoon the warm cake and lemon curd sauce into glass bowls. Dust generously with powdered sugar and top with fresh berries. Serve immediately while the cake is warm and the sauce is glossy.
