Tips for success
For the absolute best results, grate your own mozzarella cheese from a block instead of buying pre-shredded varieties. Pre-shredded cheese is coated with starch to prevent clumping, which interferes with its melting ability and prevents that classic, ultra-stretchy cheese pull shown in the video.
Freshly grated cheese melts much more smoothly and creates a far superior, gooey texture that covers the lasagna beautifully.
If you find that your slow cooker tends to run very hot and condensation pools on the underside of the lid, place a clean kitchen towel or a double layer of paper towels across the top of the slow cooker insert before putting the lid on.
The towel will absorb the excess steam and prevent water from dripping back down onto the lasagna, keeping the top cheese layer beautifully golden and bubbly rather than soggy.
Variations
- Vegetarian Spinach Lasagna: Replace the meat sauce with a rich marinara sauce and add fresh baby spinach and sliced mushrooms sautéed in garlic and olive oil between the layers.
- Three-Cheese White Lasagna: Omit the meat sauce and use a rich, creamy garlic Alfredo sauce layered with seasoned ricotta, mozzarella, and provolone cheese.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days, ensuring they cool within 2 hours of cooking.
- Freezer
- Freeze individual portions in airtight, freezer-safe containers or heavy-duty foil wraps for up to 3 months. Thaw in the fridge overnight.
- Reheat
- Reheat single portions in the microwave for 2 minutes, or bake covered with foil at 350°F (175°C) for 20 minutes until piping hot.
Allow any leftover lasagna to cool completely at room temperature for no more than two hours before storing. Cut the remaining lasagna into individual portions and place them in airtight storage containers.
Leftover lasagna actually tastes even better the next day, as the flavors continue to develop and meld together in the refrigerator. It makes a fantastic, convenient lunch or quick weeknight dinner option.
You can easily assemble this entire lasagna in the slow cooker insert the night before you plan to cook it. Simply layer all the ingredients in the ceramic pot, cover it tightly with plastic wrap or the lid, and store it in the refrigerator overnight.
In the morning, remove the plastic wrap, place the insert into the slow cooker base, and cook on low as directed, adding about thirty minutes to the total cooking time.
Serving ideas
Serve this rich, comforting lasagna hot, cut into generous square portions. To complement the heavy, cheesy layers of the pasta, pair it with a crisp, bright green garden salad tossed in a tangy Italian vinaigrette. The acidity of the dressing cuts through the richness of the cheese and meat beautifully. Add a side of warm garlic bread or crusty Italian bread to soak up any extra meat sauce.
For an elegant presentation, garnish each individual plate with a sprinkle of freshly chopped flat-leaf parsley or chiffonade of fresh basil leaves right before serving. The fresh herbs add a vibrant pop of color and a clean, aromatic contrast to the slow-cooked flavors. You can also offer extra grated parmesan cheese and a pinch of crushed red pepper flakes at the table for guests who enjoy a bit of heat.

Slow Cooker Lasagna with Stretchy Mozzarella

Ingredients
- 4 cups meat sauce, store-bought or made ahead
- 10 lasagna noodles, uncooked
- 15 oz seasoned ricotta, store-bought or made ahead
- 3 cups shredded mozzarella cheese
Instructions
- Lightly grease the inside of a 6-quart oval slow cooker with nonstick cooking spray to prevent the lasagna from sticking during the long cooking process.
- Spread a thin layer of the prepared meat sauce over the bottom of the slow cooker insert to create a moist barrier for the pasta.
- Break the uncooked lasagna noodles to fit the oval shape of the slow cooker, placing a layer of noodles over the base sauce. Spread a portion of the seasoned ricotta evenly over the noodles.
- Spoon a layer of meat sauce over the seasoned ricotta, then sprinkle with a generous handful of shredded mozzarella cheese.
- Repeat the layering process with the remaining lasagna noodles, seasoned ricotta, meat sauce, and mozzarella cheese, pressing down gently to compact the layers.
- Sprinkle the remaining shredded mozzarella cheese over the very top of the lasagna to create a thick, even blanket that will melt into a golden crust.
- Cover the slow cooker with the lid and cook on low for 4 hours, or until the noodles are completely tender and the cheese is bubbly.
- Turn off the slow cooker and remove the lid. Let the lasagna rest uncovered for 15 minutes before slicing and serving.
