Tips for success
For a deeper flavor, you can briefly sear the lamb in a separate pan before adding it to the slow cooker, although this is optional. If you choose to sear, ensure the pan is very hot and brown the meat in small batches to avoid steaming it. This step adds a layer of complexity to the final sauce but requires extra time and an additional pan to clean.
If the sauce is thinner than you prefer after the cooking time is complete, you can remove the lid for the final thirty minutes of cooking to allow some liquid to evaporate.
Alternatively, you can stir in a small amount of cornstarch mixed with cold water to thicken the sauce quickly. Always taste and adjust the seasoning with salt and pepper before serving to ensure the flavors are balanced to your preference.
Variations
- Herbed Lamb Stew: Add two sprigs of fresh rosemary and one bay leaf to the slow cooker during the assembly phase. The woody notes of the rosemary pair beautifully with the lamb and the tangy mustard.
- Root Vegetable Medley: Incorporate parsnips or diced potatoes along with the carrots. These heartier vegetables hold up well to the long cooking time and add a pleasant, starchy element to the stew.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat until steaming hot, or microwave in 1-minute intervals.
Store any leftovers in an airtight container in the refrigerator for up to three days. Allow the stew to cool to room temperature for no more than two hours before placing it in the fridge. When reheating, use a saucepan over medium heat, stirring occasionally, or use a microwave-safe dish and heat in short intervals until the stew is steaming hot throughout.
This stew is an excellent candidate for making ahead of time as the flavors tend to meld and deepen after resting in the refrigerator overnight. Prepare the dish as instructed, then cool it quickly before refrigerating.
Simply reheat the entire portion when you are ready to serve. It is a convenient option for busy weeknights when you want a home-cooked meal without the preparation time.
Serving ideas
Serve this lamb stew in wide, shallow bowls to showcase the beautiful colors of the carrots and the glossy mustard sauce. Because the stew is quite rich, it pairs perfectly with simple side dishes that can absorb the extra sauce.
A crusty piece of sourdough bread or a side of steamed potatoes makes an excellent addition, providing a neutral base that complements the tangy notes of the wholegrain mustard.
For a fresh finish, consider sprinkling a small amount of finely chopped fresh parsley or chives over the top of each serving. This adds a pop of color and a touch of brightness that balances the deep, savory flavors of the lamb.
Ensure the stew is served hot, as the fats in the sauce are most pleasant when they are warm and fluid, enhancing the overall dining experience.
