Tips for success
For the best texture, avoid overcooking the pasta. Check it at the 3-hour mark and adjust the cooking time accordingly.
If you prefer a thicker sauce, leave the lid off for the last 30 minutes to allow some moisture to evaporate. If the sauce is too thick, stir in a splash of warm water or broth.
This recipe is versatile. Feel free to add vegetables like spinach or roasted red peppers for extra color and nutrition.
You can also swap the kielbasa for cooked chicken or use a different pasta shape. The slow cooker does the work, but a quick stir before serving ensures everything is well coated and creamy.
Variations
- Add Vegetables: Stir in 2 cups of baby spinach or chopped kale during the last 30 minutes of cooking. You can also add roasted red pepper strips or sautéed mushrooms for extra flavor.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño with the sauce for a spicy version. You can also use hot Italian sausage instead of kielbasa for more heat.
- Cheese Swap: Replace the fontina with shredded mozzarella or Gruyère for a different melt and flavor. You can also add a sprinkle of Parmesan on top before serving.
- Pasta Change: Use rigatoni, penne, or cavatappi instead of shells. Adjust the cooking time if using a larger pasta shape, checking for tenderness at the 3-hour mark.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of milk or broth to loosen the sauce.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a splash of water or milk if needed to restore creaminess.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop with a splash of water or milk to restore the creamy texture. The pasta will continue to absorb sauce, so a little extra liquid helps.
This dish is ideal for making ahead. Assemble the ingredients in the slow cooker insert and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed, adding 30 minutes to the cooking time if starting from cold. This makes it perfect for busy days.
Serving ideas
Serve this hearty pasta as a main course with a simple green salad and crusty bread to soak up the creamy sauce. It also pairs well with roasted vegetables or a light soup. The dish is satisfying enough to stand alone, but a fresh side adds a nice contrast.
For a family-style meal, bring the slow cooker to the table and let everyone serve themselves. Garnish with chopped parsley, red pepper flakes, or extra black pepper.
The leftovers are just as delicious, making this a great option for meal prep or lunch the next day.

Slow Cooker Kielbasa Pasta Shells with Boursin

Ingredients
- 2 lb smoked kielbasa, sliced diagonally into 1/2-inch medallions
- 12 oz medium conchiglie pasta shells
- 2 cups smoky roasted red pepper cream sauce
- 1 wheel garlic-and-fine-herbs Boursin cheese (5.2 oz)
- 1 1/2 cups shredded Italian fontina cheese
Instructions
- Place the sliced kielbasa medallions in the bottom of a 6-quart slow cooker in an even layer. Add the pasta shells on top, then pour the roasted red pepper cream sauce over the pasta, making sure the sauce coats the shells and kielbasa evenly.
- Place the wheel of garlic-and-fine-herbs Boursin cheese in the center of the slow cooker. Sprinkle the shredded fontina cheese over the top, covering the Boursin and the pasta surface.
- Cover the slow cooker and cook on low for 3 to 4 hours, until the pasta is tender and the cheese is melted and bubbly. Do not stir during the first 2 hours to allow the pasta to absorb the sauce and cook evenly.
- After the pasta is tender, stir the mixture gently to combine the melted Boursin and fontina with the sauce and pasta. Be careful not to break the shells. The sauce should be creamy and coat each shell.
- Spoon the hot pasta onto plates or into bowls. Serve immediately while the cheese is still stretchy and the sauce is bubbling. The dish is best enjoyed fresh from the slow cooker.
