Tips for success
For a more intense jalapeño flavor, keep some of the seeds when dicing the roasted peppers. Always wear gloves when handling hot jalapeños to prevent skin irritation.
If the dip seems too thick after cooking, stir in a splash of milk or heavy cream until the desired consistency is reached. This adjustment should be done carefully, a tablespoon at a time.
To add a touch of acidity that cuts through the richness of the cheeses, consider adding a teaspoon of lime juice just before serving. This small addition brightens the overall flavor profile of the dip.
Ensure that all serving vessels, such as tortilla scoops, are sturdy enough to hold the weight of the thick, cheesy mixture without breaking during the dipping process.
Variations
- Buffalo Chicken Popper Dip: Replace the roasted jalapeños with 1/2 cup of your favorite buffalo hot sauce. The combination of buffalo heat and creamy cheese provides a classic twist on this dip that is always a hit at parties.
- Extra Cheesy Version: Add an additional 1/2 cup of shredded mozzarella cheese to the mix. The mozzarella adds an incredible cheese pull that makes the dip even more visually appealing and indulgent for your guests.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 3 days in the refrigerator.
- Freezer
- Freezing is not recommended as the cheese sauce may separate and lose its creamy texture upon thawing and reheating.
- Reheat
- Reheat gently in the microwave in 30-second intervals, stirring in between, or on the stovetop over low heat until warmed through.
Transfer any leftover dip to an airtight container. Allow the dip to cool at room temperature for no more than 2 hours before placing it in the refrigerator. Properly sealed, the dip will maintain its quality and flavor for up to three days when stored correctly in the refrigerator, making it a great option for enjoying over several days.
You can prepare the dip ingredients in the slow cooker insert and store it covered in the refrigerator for up to 24 hours before cooking. When ready, simply place the insert into the slow cooker base and add an extra 30 minutes to the cooking time to account for the cold start. Add the panko topping just before serving to keep it crisp.
Serving ideas
Serve this dip warm directly from the slow cooker to keep the cheese at the perfect dipping consistency.
Provide a variety of dippers such as sturdy tortilla scoops, corn chips, or even fresh vegetable sticks like celery and bell pepper strips for those looking for a lighter accompaniment. The contrast between the warm dip and cool, crunchy vegetables is particularly refreshing.
This dish is best suited for casual settings where guests can serve themselves. Set up a station around the slow cooker with small plates, napkins, and a serving spoon.
If the dip begins to thicken as it sits, simply stir it occasionally or switch the slow cooker to the warm setting to keep the texture smooth and inviting for the duration of the gathering.

Slow-Cooker Jalapeño Popper Shredded Chicken Dip

Ingredients
- 3 cups shredded chicken
- 2 blocks (8-ounce each) cream cheese
- 2 cups sharp cheddar, shredded
- 1 cup Monterey Jack cheese, shredded
- 6 roasted jalapeños, diced
- 1 cup crispy bacon, chopped
- 1/2 cup Panko breadcrumbs, toasted
- 2 jalapeño rings, sliced
Instructions
- Place the cooked shredded chicken, two blocks of cream cheese, shredded sharp cheddar, shredded Monterey Jack, diced roasted jalapeños, and chopped crispy bacon into the ceramic slow cooker insert. Keep the chicken refrigerated until just before adding it to the pot, ensuring it is not left at room temperature for more than 30 minutes. Stir everything gently to combine the ingredients, ensuring the cream cheese is evenly distributed amongst the chicken and other additions.
- Cover the slow cooker with its lid and set to the LOW heat setting. Allow the mixture to cook for 2 hours. By the end of this period, the mixture should be bubbling hot, and the cheeses must be completely melted and integrated into a creamy consistency. The chicken must reach a safe internal temperature of 165°F (74°C).
- Once the dip is fully cooked and creamy, sprinkle the toasted Panko breadcrumbs evenly over the top for added texture. Arrange the sliced jalapeño rings on the surface as a garnish. Serve the dip warm directly from the ceramic insert with your favorite tortilla scoops or crackers for dipping.
