Tips for success

For a deeper color and even more intense flavor, you can sear the pork rib sections in a hot skillet for 2 minutes per side before placing them into the slow cooker. This extra step adds a layer of Maillard reaction that enhances the final complexity of the dish. However, if you are short on time, skipping this step still yields delicious and tender results.

If you prefer a thicker, more intense glaze, transfer the remaining liquid from the slow cooker to a small saucepan after removing the ribs. Simmer the liquid over medium heat for 5 to 10 minutes until it reduces to a syrup.

Drizzle this concentrated sauce over the ribs just before serving to give them a professional, restaurant-style finish that looks and tastes incredible on the plate.

Variations

  • Spicy Honey Soy Ribs: Add a tablespoon of chili garlic sauce or a teaspoon of red pepper flakes to the sauce mixture before pouring it over the ribs to introduce a bold, spicy kick to the sweetness.
  • Citrus Infused Ribs: Incorporate the zest of one orange and two tablespoons of fresh orange juice into the honey-soy sauce to add a bright, citrusy acidity that balances the savory notes of the soy.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days. Cool to room temperature within 2 hours of cooking before refrigerating.
Freezer
Freeze in an airtight, freezer-safe container for up to 2 months. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat in a preheated oven at 325°F (160°C) until warmed through, or use a saucepan over low heat, adding a splash of water to loosen the glaze.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. Store the ribs in the refrigerator for up to three days.

For longer storage, the ribs can be frozen in a freezer-safe bag or container for up to two months. When freezing, ensure as much air as possible is removed from the package to maintain the quality of the meat.

This dish is perfect for making ahead as the flavors continue to meld and develop in the refrigerator. You can prepare the entire recipe a day in advance, allow it to cool, and then reheat it gently on the stovetop or in the oven.

This also makes it easier to skim off any excess solidified fat from the surface of the sauce before reheating, resulting in a cleaner, more refined flavor.

Serving ideas

Serve these ribs alongside a portion of steamed white rice or jasmine rice, which is excellent for soaking up the excess honey-soy glaze. A side of stir-fried bok choy or blanched broccoli adds a necessary crunch and freshness that balances the richness of the pork. For a more casual meal, pair the ribs with a simple cucumber salad dressed with rice vinegar and a pinch of salt.

When plating, arrange the ribs carefully to showcase the glossy glaze. You may choose to garnish the dish with thinly sliced green onions or toasted sesame seeds if you have them on hand, though the ribs are flavorful enough on their own.

Ensure each serving includes a generous spoonful of the sauce from the bottom of the slow cooker to drizzle over the meat and rice for maximum enjoyment.

Frequently asked questions

Can the ribs be cooked on the high setting to save time?
Cooking on high is not recommended for this recipe. The low setting is essential for the slow breakdown of connective tissues in the pork ribs. High heat can cause the meat to toughen rather than become tender and may result in the honey burning or the sauce evaporating too quickly before the meat is fully cooked.
Is it necessary to remove the fat from the ribs before cooking?
While some fat is necessary for flavor and moisture, you can trim any large, thick pieces of surface fat before adding the ribs to the slow cooker. Excess fat can make the sauce greasy, but leaving a small amount helps keep the meat succulent during the long braising process.
Why does the sauce look thin after four hours?
The moisture released by the pork and onions contributes to the liquid volume. If the sauce is too thin, remove the ribs and simmer the liquid in a saucepan on the stove until it reaches your desired consistency. This ensures the ribs remain tender while the sauce becomes perfectly thick and syrupy.

Ingredients

  • 2 lb pork rib sections, cut into individual portions
  • 1 medium yellow onion, thinly sliced
  • 1 tsp ground ginger
  • 1 cup honey-soy sauce mixture

Instructions

  1. Place the pork rib sections in an even layer at the bottom of the slow cooker. Scatter the sliced onions over the top of the ribs. Sprinkle the ground ginger evenly over the onions and pork.
  2. Pour the honey-soy sauce mixture over the ingredients in the slow cooker. Cover with the lid and set to low.
