Tips for success
For the best flavor, use a BBQ sauce with a high sugar content — it will caramelize and thicken during cooking. If your sauce is thin, you can remove the chicken after shredding and simmer the sauce on the stovetop for a few minutes to reduce it.
If you prefer a spicier dish, add a pinch of cayenne or a few dashes of hot sauce before cooking. For a deeper smoke flavor, use a smoked paprika or add a few drops of liquid smoke.
The garlic cloves are a hidden gem — they become sweet and spreadable. Serve them whole or mash them into the rice for a buttery, garlicky bite. If you have leftovers, the chicken reheats beautifully.
Store it in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. Reheat gently on the stovetop or microwave, adding a splash of water or extra BBQ sauce if needed to loosen the sauce.
Variations
- Spicy Version: Use a spicy BBQ sauce or add 1-2 teaspoons of chipotle hot sauce along with the BBQ sauce. For extra heat, include a finely chopped jalapeño with the garlic and scallions.
- Honey Garlic Twist: Replace the hickory BBQ sauce with a honey garlic sauce and add 2 tablespoons of soy sauce and 1 tablespoon of grated fresh ginger for an Asian-inspired flavor.
- Smoky Chipotle: Mix 2 tablespoons of adobo sauce from canned chipotles into the BBQ sauce, and add 1 teaspoon of smoked paprika. This adds a deep, smoky heat that pairs well with the sweet sauce.
- Pineapple BBQ: Stir in 1/2 cup of crushed pineapple (drained) with the BBQ sauce. The pineapple adds a tropical sweetness and helps tenderize the chicken further.

Store leftover chicken in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; add a splash of water or chicken broth when reheating to return it to a saucy consistency.
This dish is perfect for meal prep. Cook the chicken as directed, shred it, and store it in the fridge for up to 4 days. Reheat individual portions in the microwave or on the stovetop. You can also freeze the shredded chicken in freezer-safe bags or containers for up to 3 months; thaw overnight in the fridge before reheating.
Serving ideas
Serve the shredded chicken over steamed jasmine rice, as shown in the video, to soak up the extra sauce. For a low-carb option, serve it on a bed of greens or cauliflower rice.
The dish also works well in tacos, sliders, or as a topping for baked potatoes. A side of coleslaw or pickles adds a bright, crunchy contrast to the rich, smoky chicken.
Garnish with extra sliced scallions or a sprinkle of sesame seeds if you like, though the video keeps it simple.
The chicken is hearty enough to stand alone, but a simple green salad or steamed broccoli would round out the meal. For a casual dinner, serve it straight from the slow cooker with a spoon — it's that kind of dish.

Slow Cooker Hickory BBQ Chicken Thighs

Ingredients
- 6 boneless skinless chicken thighs
- 12 peeled whole garlic cloves
- 4 scallions, sliced
- 1 1/2 cups hickory brown-sugar BBQ sauce
Instructions
- Place the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Scatter the peeled whole garlic cloves and sliced scallions evenly over the chicken. Pour the hickory brown-sugar BBQ sauce over everything, using a spatula to spread it into an even coating.
- Cover the slow cooker and cook on low for 6 to 7 hours, until the chicken is tender and shreds easily with a fork. The garlic should be soft and caramelized.
- Turn off the slow cooker. Using two forks, shred the chicken thighs directly in the sauce. Stir to coat the shredded meat with the glaze. The garlic cloves will break apart and melt into the sauce.
- Spoon steamed jasmine rice onto plates. Top with the shredded chicken and a generous amount of the garlicky BBQ sauce. Garnish with extra sliced scallions if desired.
