Before you start

Before you start, make sure the slow cooker is clean and dry. If using fresh chicken thighs, pat them dry with paper towels — no need to season, as the BBQ sauce provides plenty of flavor.

Peel the garlic cloves if they're not already peeled; you can buy pre-peeled cloves to save time. Slice the scallions, separating the white and green parts if you like, though you'll add them all at once. Measure the BBQ sauce and have it ready. No other prep is needed.

Ingredients at a glance (4)
  • 6 boneless skinless chicken thighs
  • 12 peeled whole garlic cloves
  • 4 scallions, sliced
  • 1 1/2 cups hickory brown-sugar BBQ sauce

Instructions

Layer and Cook

  1. Layer the Ingredients
Place the boneless skinless chicken thighs in the bottom of a 6-quart slow cooker in a single layer. Scatter the peeled whole garlic cloves and sliced scallions evenly over the chicken. Pour the hickory brown-sugar BBQ sauce over everything, using a spatula to spread it into an even coating.
Look for The chicken is covered with sauce and aromatics; no need to stir.
Tip Arrange the chicken in a single layer so it cooks evenly and absorbs the sauce.
  2. Cook on Low
Cover the slow cooker and cook on low for 6 to 7 hours, until the chicken is tender and shreds easily with a fork. The garlic should be soft and caramelized.
Look for The sauce will be bubbling gently around the edges and the chicken will look glazed.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not lift the lid during cooking; the heat escapes and extends the cooking time.

At the end of this phase, the slow cooker is filled with raw chicken, garlic, scallions, and sauce. The sauce covers the chicken in a glossy, even layer. When you turn on the cooker, you'll see the sauce begin to bubble around the edges after about an hour.

The aroma of hickory and garlic will fill the kitchen. After 6 hours, the chicken should be fork-tender and the sauce should have a rich, caramelized color.

Shred and Coat

  1. Shred the Chicken
Turn off the slow cooker. Using two forks, shred the chicken thighs directly in the sauce. Stir to coat the shredded meat with the glaze. The garlic cloves will break apart and melt into the sauce.
Look for The chicken pulls apart easily and the sauce thickens slightly.
Tip Leave some larger chunks for texture if you prefer.

When you shred the chicken, it should pull apart with minimal resistance, leaving long, juicy strands. The sauce will be thinner than at the start, but as you stir, it will cling to the meat. The garlic cloves will break down, some mashing into the sauce and others remaining as soft, whole pieces. The mixture will look glossy and saucy, with the scallions dispersed throughout.

Serve

  1. Serve Over Rice
Spoon steamed jasmine rice onto plates. Top with the shredded chicken and a generous amount of the garlicky BBQ sauce. Garnish with extra sliced scallions if desired.
Look for The chicken is glossy and the sauce pools around the rice.
Tip For extra richness, spoon some of the melted garlic cloves over the top.

The plated dish shows a generous mound of shredded chicken over fluffy white rice, with the mahogany sauce pooling around the edges. The garlic cloves are visible as pale, tender nuggets. The steam rises and the aroma is smoky, sweet, and savory. The final dish should look rustic and inviting, with the sauce glistening under the light.

Common mistakes

One common mistake is lifting the lid to peek — this lets out heat and extends cooking time. Trust the process and keep the lid on. Another is using chicken breasts instead of thighs; breasts dry out in the slow cooker. Stick with thighs for the best texture.

Finally, don't skip the garlic — it's not just a flavoring; it becomes a sweet, spreadable confit that elevates the whole dish. And be sure to use a thick BBQ sauce, not a watery one, so the glaze clings to the chicken.

How to tell it’s done

The chicken is done when it shreds easily with a fork and the internal temperature reaches at least 165°F (74°C) when checked with an instant-read thermometer.

The sauce should be bubbling and slightly thickened, and the garlic cloves should be soft enough to mash with a fork. If the chicken is still tough after 6 hours, continue cooking in 30-minute increments until it yields easily.

  • Poultry: 165°F (74°C) in the thickest part
