Tips for success
For the most flavorful glaze, use a good-quality pineapple juice with no added sugar. The brown sugar and ketchup provide enough sweetness, so you do not need extra. If you prefer a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce along with the ginger.
The sauce will be thinner at first, but as it reduces, it thickens into a glossy coating. Do not rush this step — the reduction is what gives the chicken its signature sticky texture.
When shredding the chicken, use two forks and pull in opposite directions for long, meaty strands. If you prefer chunkier pieces, leave some larger bites.
The chicken can be kept warm in the slow cooker on the 'warm' setting for up to 2 hours before serving, but the sauce may thicken further — add a splash of pineapple juice if needed. Garnish with extra green onions or sesame seeds for a pretty finish, though these are optional.
Variations
- Spicy Huli Huli: Add 1 to 2 teaspoons of sriracha or red pepper flakes to the glaze for a fiery kick. The heat balances the sweetness and adds a new dimension. Serve with cooling cucumber slices.
- Pineapple Chicken Tacos: Shred the chicken and serve in warm corn tortillas with grilled pineapple, shredded cabbage, and a drizzle of lime crema. Omit the coconut rice for a lighter meal.
- Huli Huli Lettuce Wraps: Spoon the chicken into butter lettuce cups and top with pickled red onions, cilantro, and crushed peanuts. This is a fresh, crunchy take on the classic.
- Huli Huli Rice Bowls: Serve the chicken over steamed jasmine rice with roasted bell peppers, edamame, and a soft-boiled egg. Drizzle with extra glaze and sprinkle with sesame seeds.
Storage and make-ahead
- Fridge
- Store leftover chicken in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the shredded chicken in a freezer-safe container for up to 3 months.
- Reheat
- Reheat the chicken in a covered skillet over medium-low heat, stirring occasionally, until warmed through.
Store any leftover Huli Huli chicken in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a tablespoon of water or pineapple juice when reheating. Keep the coconut rice separately in another container. The chicken can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
The glaze can be mixed up to 2 days ahead and stored in the refrigerator in an airtight container. The chicken can be assembled in the slow cooker insert and refrigerated overnight, then cooked the next day — just add 30 minutes to the cooking time if starting from cold.
Shredded chicken can be made ahead and reheated gently on the stovetop with a splash of juice to loosen the sauce.
Serving ideas
Serve the Huli Huli chicken over a generous scoop of coconut rice, with the glaze spooned over the top. Arrange two or three grilled pineapple rings on the side and sprinkle with chopped green onions.
For a complete meal, add a simple green salad or steamed broccoli. The sweet-savory chicken pairs beautifully with the fragrant rice and the smoky pineapple, creating a balanced plate that is both comforting and vibrant.
This dish is also excellent in tacos or lettuce wraps, or piled onto a bun for a Hawaiian-inspired sandwich. Leftovers can be transformed into a quick lunch by serving over a bed of greens or in a rice bowl. The flavors intensify overnight, so leftovers are often even better the next day. Garnish with a squeeze of lime or a drizzle of sriracha for extra brightness, if desired.

Crockpot Hawaiian Huli Huli Chicken with Coconut Rice

Ingredients
- 6 boneless, skinless chicken thighs
- 1 cup pineapple juice
- 1/2 cup packed brown sugar
- 1/2 cup ketchup
- 1/4 cup soy sauce
- 2 tbsp Worcestershire sauce
- 1 tbsp fresh grated ginger
- 4 cups cooked coconut rice
- 6 grilled pineapple rings
- 1/4 cup chopped green onions
Instructions
- Place the chicken thighs in the bottom of a 6-quart slow cooker in a single layer. In a medium bowl, whisk together the pineapple juice, brown sugar, ketchup, soy sauce, Worcestershire sauce, and grated ginger. Pour the mixture over the chicken, making sure each thigh is coated.
- Cover the slow cooker with the glass lid. Cook on HIGH for 3 hours, or until the chicken is fork-tender and easily shreds. Do not lift the lid during the first 2 hours to keep the heat steady.
- Using two forks, shred the chicken thighs directly in the slow cooker, turning them in the reduced glaze until every piece is coated. The sauce should be thick enough to cling to the meat; if it looks too thin, let it cook uncovered for 10 more minutes.
- If the sauce is not thick enough after shredding, set the slow cooker to HIGH and leave the lid off for 5 to 10 minutes, stirring once, until it reduces to a syrupy coating. The sauce should lightly coat the back of a spoon.
- Spoon the shredded chicken and glaze over a bed of warm coconut rice. Arrange grilled pineapple rings on the side and sprinkle with chopped green onions. Serve immediately.
