Tips for success
For the best flavor, use a good-quality stout like Guinness, but any dark beer will work. If you prefer a non-alcoholic version, replace the beer with beef broth and add a teaspoon of balsamic vinegar for depth.
The sour cream and Dijon are essential—they create a creamy, tangy gravy that balances the richness of the beef. Don't skip them, even if you're tempted to simplify.
To make the sauce even thicker, you can whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) during the last 30 minutes of cooking.
But honestly, the gravy is already quite thick from the sour cream and the natural juices of the roast. If you have leftovers, the gravy will thicken even more as it cools—just add a splash of beef broth when reheating.
Variations
- Mushroom Guinness Roast: Add 8 oz sliced cremini mushrooms along with the pearl onions. They will release their liquid and add an earthy depth that pairs beautifully with the stout.
- Horseradish Cream Twist: Replace the Dijon with 2 tablespoons prepared horseradish and reduce the sour cream to 1/4 cup. The sharp, spicy kick cuts through the richness beautifully.
- Smoky Bacon Version: Wrap the chuck roast in 4 slices of bacon before placing it in the slow cooker. The bacon adds a smoky, salty flavor that infuses the gravy as it cooks.
- Herb-Infused Gravy: Add 2 sprigs of fresh thyme and 1 bay leaf to the pot before cooking. Remove them before shredding. The herbs add a subtle, aromatic note to the sauce.

Store leftover roast and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight, making it even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce has thickened too much.
This dish can be assembled the night before. Place all the ingredients in the slow cooker insert, cover, and refrigerate overnight.
In the morning, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time since the pot starts cold. Leftovers also freeze well for up to 3 months.
Serving ideas
Serve this roast over steamed white rice, which soaks up the luscious gravy beautifully. Mashed potatoes or egg noodles are also excellent choices. Pair it with a simple green salad or roasted vegetables to add freshness and color. The dish is rich and satisfying, so a light side is all you need.
For a full Irish-inspired meal, serve with soda bread and a side of colcannon (mashed potatoes with cabbage or kale). The creamy, tangy gravy is also delicious over creamy polenta.
Don't forget a glass of stout to echo the flavors in the dish. Leftovers make an incredible sandwich the next day—pile the beef on a crusty roll and top with extra gravy.

Slow-Cooker Guinness Onion Dijon Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 cup pearl onions, peeled
- 1 cup Guinness stout
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1 cup au jus
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Scatter the pearl onions around the roast, tucking them into the sides. Pour the Guinness stout over the roast and onions, letting it pool around the meat.
- Dollop the sour cream over the top of the roast. Spread the whole-grain Dijon mustard over the sour cream. Pour the au jus down the side of the pot, not directly over the toppings.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender and shreds easily. The roast should be cooked to an internal temperature of at least 145°F (63°C), but for fall-apart tenderness, cook until it reaches 200°F (93°C) or higher. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef directly in the slow cooker. Stir the shredded meat into the cooking liquid so it soaks up the gravy. Let the meat rest in the hot liquid for at least 3 minutes before serving.
- Spoon steamed white rice onto plates. Top with the shredded beef and onions, and ladle plenty of the creamy Guinness gravy over everything.
