Tips for success
For the best flavor, use a BBQ sauce that you love on its own. Since it's the main seasoning, a mediocre sauce will result in a mediocre dish. If you want to enhance the smokiness, add a teaspoon of smoked paprika or a few drops of liquid smoke along with the sauce.
You can also add a tablespoon of apple cider vinegar for extra tang, but that's optional. The recipe is designed to be minimalist, so don't feel the need to add more.
Cutting the chicken into even 1-inch cubes is crucial. If some pieces are larger, they'll take longer to cook and might be dry by the time the smaller ones are done. Use a sharp knife and take your time.
If you're using chicken thighs, you can leave them slightly larger, as they're more forgiving. And remember: don't stir the ingredients before cooking. The layering helps the aromatics cook evenly and prevents them from sinking to the bottom and burning.
Variations
- Spicy Kick: Add 1-2 teaspoons of sriracha or a pinch of cayenne pepper along with the BBQ sauce for a spicy version. The heat builds as the sauce reduces, so start with less and adjust at the end.
- Honey Garlic: Replace the BBQ sauce with a mix of 1 cup honey, 1/2 cup soy sauce, and 4 minced garlic cloves. Omit the ginger and scallions, or keep them for a different flavor profile. Cook the same way.
- Teriyaki Twist: Use teriyaki sauce instead of BBQ sauce, and add a tablespoon of rice vinegar and a teaspoon of sesame oil. Garnish with sesame seeds and extra scallions before serving.
- Smoky Chipotle: Mix 1 cup of your favorite BBQ sauce with 2 tablespoons of adobo sauce from canned chipotle peppers. Add a minced chipotle pepper if you want extra heat. The smoky and spicy flavors pair well with the ginger and scallions.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken when chilled; add a splash of water when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring in between, or in a saucepan over medium-low heat until warmed through.
Store any leftover chicken in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools, so you may want to add a splash of water or chicken broth when reheating to loosen it. Reheat gently in the microwave or on the stovetop until warmed through.
You can assemble the entire dish—chicken, ginger, scallions, and sauce—in the slow cooker insert the night before. Cover and refrigerate overnight. In the morning, place the insert in the slow cooker and cook on LOW for 4 hours. If the insert is cold, you may need to add 30 minutes to the cooking time. This is a great make-ahead option for busy weeknights.
Serving ideas
Serve the chicken over steamed jasmine rice to soak up the glossy sauce. The neutral rice balances the sweet-smoky flavors and makes the dish a complete meal.
For a low-carb option, serve over cauliflower rice or alongside roasted vegetables. The chicken is also delicious in lettuce wraps or on slider buns, but the video shows it over rice, so that's the classic way.
This dish is best served hot, right after cooking. The sauce is at its glossiest and the chicken is at its most tender. If you have leftovers, they're great cold in a salad or reheated for lunch.
A garnish of extra sliced scallions adds freshness and color, but it's not necessary—the dish is already full of flavor. Pair with a crisp green salad or steamed broccoli for a balanced dinner.

Slow Cooker Hickory BBQ Chicken Bites with Ginger and Scallions

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tbsp fresh ginger, julienned
- 4 scallions, cut into 2-inch batons
- 1 1/2 cups hickory brown sugar BBQ sauce
Instructions
- Place the cubed chicken breasts in the bottom of a 6-quart slow cooker. Scatter the julienned ginger and scallion batons evenly over the chicken. Do not stir—layering keeps the aromatics from burning and lets them infuse the sauce as it cooks.
- Pour the hickory BBQ sauce evenly over the chicken, ginger, and scallions. Use a spoon to spread the sauce so it covers most of the chicken, but do not stir. The sauce will thin out and create a glaze as the chicken releases its juices.
- Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is cooked through and tender. Do not lift the lid during the first 3 hours—every time the lid is lifted, heat escapes and adds 20 minutes of cooking time.
- After 4 hours, use an instant-read thermometer to check the internal temperature of the chicken. It must reach at least 165°F (74°C) in the thickest piece. If not, continue cooking in 15-minute increments until it registers the safe temperature.
- Gently stir the chicken in the sauce to coat every piece with the glossy glaze. The sauce should be thick enough to cling to the chicken. If it looks too thin, let it cook uncovered on LOW for 10-15 minutes to reduce.
- Spoon the glazed chicken and sauce over steamed jasmine rice. Garnish with extra sliced scallions if desired, but the video does not show a garnish, so keep it simple. Serve hot.
