Before you start

Before you start, cut the chicken breasts into 1-inch cubes. This is the most time-consuming part, but it goes quickly with a sharp knife. Julienne the ginger by cutting it into thin matchsticks, and slice the scallions into 2-inch batons.

Have your 6-quart slow cooker ready. There's no need to brown the chicken or sauté anything—this is a true dump-and-go recipe. If you have time, you can also start your rice now, so it's ready when the chicken is done.

Ingredients at a glance (4)
  • 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp fresh ginger, julienned
  • 4 scallions, cut into 2-inch batons
  • 1 1/2 cups hickory brown sugar BBQ sauce

Instructions

Layer and Sauce

  1. Layer the Chicken and Aromatics
Place the cubed chicken breasts in the bottom of a 6-quart slow cooker. Scatter the julienned ginger and scallion batons evenly over the chicken. Do not stir—layering keeps the aromatics from burning and lets them infuse the sauce as it cooks.
Look for The chicken should be in a single layer as much as possible, with ginger and scallions scattered on top.
Tip Cut the chicken into uniform 1-inch cubes so they cook evenly and stay juicy.
  2. Pour the BBQ Sauce Over Everything
Pour the hickory BBQ sauce evenly over the chicken, ginger, and scallions. Use a spoon to spread the sauce so it covers most of the chicken, but do not stir. The sauce will thin out and create a glaze as the chicken releases its juices.
Look for The sauce should coat the top of the chicken, with some bare spots—it will spread during cooking.
Tip If the sauce is very thick, you can drizzle 2 tablespoons of water over the top to help it melt, but this is optional.

At the start, the slow cooker contains raw chicken cubes, scattered ginger, and scallion batons, all topped with a thick layer of hickory BBQ sauce. The sauce is unevenly spread, leaving some chicken exposed.

The aromatics are bright and fresh, with the ginger's sharp scent cutting through the sweet sauce. This phase is quick—just assemble and cover. There's nothing to look for beyond making sure the chicken is mostly covered by sauce, because that's what will keep it moist and flavorful.

Slow Cook and Check

  1. Slow Cook Until Tender
Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is cooked through and tender. Do not lift the lid during the first 3 hours—every time the lid is lifted, heat escapes and adds 20 minutes of cooking time.
Look for The sauce should be bubbling gently around the edges, and the chicken should be opaque and tender when pierced with a fork.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If you prefer a thicker glaze, cook on HIGH for 2 1/2 to 3 hours instead, but check at 2 hours.
  2. Check the Chicken Temperature
After 4 hours, use an instant-read thermometer to check the internal temperature of the chicken. It must reach at least 165°F (74°C) in the thickest piece. If not, continue cooking in 15-minute increments until it registers the safe temperature.
Look for The thermometer should read 165°F (74°C) or higher. The chicken should be fork-tender and easily shred with a spoon.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Insert the thermometer into the center of a few cubes, not touching the bottom of the slow cooker, to get an accurate reading.

After 4 hours on LOW, the slow cooker is bubbling gently around the edges. The raw chicken has turned opaque and tender, and the sauce has thinned out and then thickened again, now clinging to the meat.

The ginger has softened and become translucent, and the scallions are wilted and sweet. The aroma is smoky, sweet, and slightly spicy. Before moving on, use an instant-read thermometer to confirm the chicken reaches 165°F (74°C). If it doesn't, cook for 15 more minutes.

Glaze and Serve

  1. Stir and Glaze the Chicken
Gently stir the chicken in the sauce to coat every piece with the glossy glaze. The sauce should be thick enough to cling to the chicken. If it looks too thin, let it cook uncovered on LOW for 10-15 minutes to reduce.
Look for The sauce should coat the back of a spoon, and the chicken pieces should be glistening with a mahogany glaze.
Tip Stir gently to avoid breaking up the chicken cubes. Use a silicone spatula or wooden spoon.
  2. Serve Over Rice
Spoon the glazed chicken and sauce over steamed jasmine rice. Garnish with extra sliced scallions if desired, but the video does not show a garnish, so keep it simple. Serve hot.
Look for The chicken should be glossy and steaming, with the sauce pooling around the rice.
Tip For a complete meal, serve with a side of steamed broccoli or a crisp green salad.

After stirring, every piece of chicken is coated in a glossy mahogany glaze. The sauce is thick enough to coat a spoon, and the ginger and scallions are distributed throughout. The dish looks rich and caramelized, with steam rising as you scoop it over rice. The chicken should be fork-tender but still hold its shape. The final taste is sweet, smoky, and savory, with a pleasant bite from the ginger. Serve hot, with extra sauce spooned over the rice.

Common mistakes

The most common mistake is lifting the lid too early. Every time you peek, heat escapes and extends the cooking time. Trust the process—the chicken will be fine. Another mistake is using chicken that isn't cut into uniform cubes.

Uneven pieces cook at different rates, leaving some dry and some underdone. Finally, don't skip the final stir. The sauce can separate as it sits, and stirring ensures every piece is coated. If you forget, the bottom pieces might be drier than the top.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and is fork-tender. The sauce should be bubbling and slightly thickened, clinging to the meat. If you lift a piece of chicken, it should be glazed and glossy, not sitting in a watery sauce. If the sauce is too thin, remove the lid and cook on LOW for another 10-15 minutes to reduce. The final dish should have a rich, mahogany color and a sweet-smoky aroma that fills the kitchen.

  • Poultry: 165°F (74°C) in the thickest part
